Corn Muffins by Mai Goodness| Corn Bread | Easy To Prepare | Ala Kenny Rogers Muffin
Corn Muffin is one of my favorite go to breakfast muffins best with coffee or tea. Very easy to prepare and no need to use a mixer. Beginners in baking can whip this up easily to serve your family and friends! You can turn this into a business as well. Enjoy!
Ingredients:
Buttermilk Ingredients: (If you don't have buttermilk available)
1/2 cup (110g) fresh milk
1 tsp white vinegar (calamansi or lemon juice can also be used)
Wet Ingredients:
1/2 cup (110g) softened butter, room temperature
1 cup (215g) brown sugar, firmly packed
2 medium eggs
1 tbsp vanilla flavoring or 1 tsp concentrated vanilla extract
Dry Ingredients: (Sift all except for salt)
2 cups (250g) all purpose flour
1/2 cup (80g) corn meal or polenta
1/2 cup (65g) skim milk powder or any powdered milk
1 1/2 tbsp (12g) baking powder
1 tbsp (7g) cornstarch
1/2 tsp (2g) iodized salt
1 cup to 1 1/2 cup canned corn kernels (425g canned)
Note:
1. If you want the muffins to be a little bit sweeter and moist, add 1/4 cup corn syrup or honey or maple syrup on the mixture. Kids will love it!
2. If no available cornmeal, you may use all purpose flour. But of course, corn meal adds to the taste and texture of muffin.
Baking Time:
200⁰C 20 to 25 mins
Baking Pan:
3 oz cupcake tray
3 oz (5cm) ice cream scoop
Yield:
24 pcs of 3 oz muffins
You can sell it for: P7 to P10 each
• Preheat oven at 200⁰C for 15 minutes. Then bake for 20 to 25 minutes or until the crown is golden brown and crusty on the outside.
• Turn the pan around at 15 mins of baking if using conventional oven without fan for even cooking.

✅Ingredients
• ½ cup butter, melted
• ⅔ cup sugar
• 2 large eggs
• 1 cup buttermilk
• ½ teaspoon baking soda
• 1 cup cornmeal
• 1 cup flour
• ½ teaspoon salt
✅Instructions
1️⃣ 00:00:14 - Preheat the oven to 375 degrees. Grease a muffin tin or line it with cupcake liners.
2️⃣ 00:00:20 - In a medium-sized bowl combine the melted butter with the sugar. Beat in the eggs until well blended.
3️⃣ 00:00:40 - Add in the baking soda and then slowly pour in the buttermilk while you stir.
4️⃣ 00:00:51 - Add in the cornmeal, flour, and salt and stir until well combined. Pour batter into the prepared muffin tin.
5️⃣ 00:01:19 - Bake in the 375 degree oven for about 20 minutes, until the tops start to brown.
