How To make Corn Muffins (Samuel)
2 c Corn flour or cornmeal
- (yellow or blue) 1 c Whole wheat pastry flour
6 oz Soft tofu
3 c Water
1/2 ts Salt (sea salt in book)
Mix flours. Crumble tofu into blender. Add boiled water and salt to tofu in blender (carefully) and blend until not quite smooth. (Just a few pulses please). Dont do this in too small blender or without lid like I did once. The goal is muffins, not 2nd degree burns. Add immediately to flour and mix well. Spoon into muffin tins or cast iron stick trays and bake at 400 degrees for about 1/2 hour until golden brown. She suggests you heat oven first and place oiled muffin tins in to heat up beforehand to get a "wonderful crust". Please note, I have to oil the tins because I don't use teflon products around by birds, but this might work also.....This is not sweet bread, I serve corn potato chowder with it. Ako pratite precizno ovaj recept uvek ćete dobiti proju koja nije ni previše suva, ni previše tvrda ili živa, već ostane lepa I vazdušasta. Svejedno je da li ćete smešu izliti u tepsiju ili sipati u silikonske kalupe, razlika je samo u tome što kada imate kalupe možete da se igrate sa ukusima i dodate šta god želite.
Ja sam se ovaj put odlučila da u jedan deo kalupa stavim čistu masu, u deo da dodam kockice sira, a u preostali deo šunku. Od ove količine sam ispekla ukupno 30 mafina.

Caribbean Corn Pie (Eggless)//Sam's Gifted Hands
Corn pie can be enjoyed as a side dish with your Sunday meal and eaten with salad. Some love their corn moist, dry, or in between. Always increase or decrease the recipe, and the cooking to your liking.
Recipe
2 tablespoons of butter
1/2 of a large onion
5 mini bell peppers
1/2 scotch bonnet pepper
Two cloves of garlic
1 medium-sized carrots
3 stalks of chive/green onion
1 tablespoon of flour with 1 tablespoon of water from whole corn mixed together.
1 14.75 oz tin of cream style corn
1 14.75 oz tin of whole corn
1 cup of evaporated milk (one tin can be used as well).
1 cup of corn meal (3/4 cups can be used as well)
1/2 cup of cheddar cheese ( more if you prefer)
1 cup of extra cheese for the top
1/4 teaspoon black pepper
1 teaspoon salt
Bake in a preheated oven at 350 degrees for 35-45 minutes, depending on your stove.

Corn bread doesn't have a whole lot of secrets, but I have one. That secret is using an herb browned butter in the batter. It's a small extra bit of effort for a massive addition of flavor. Either way, 30 minutes is all you need to make this so let's gooooo.
