How To make Chocolaty Pudding Cake
1 c Unbleached all purpose flour
1 c Sugar
1/2 c Cocoa powder
2 ts Baking powder
1/2 c Soy milk
= (or rice or almond milk) 2 tb Vegetable oil
1/2 c Chopped walnuts
1 1/4 c Hot water
Recipe by: JOY brOCKMAN (AUFJ96B) Preheat the oven to 350 degrees. Lightly oil a 9-inch square baking pan. In a large bowl, mix the flour, 1/2 C. of the sugar, 1/4 C. of the cocoa, and the baking powder. Stir in the soy milk and add the walnuts. Spread the cake mixture in the baking pan and sprinkle with remaining 1/2 C. of sugar and 1/4 C. of cocoa. Pour the hot water over the entire cake batter. Bake for 35 to 40 minutes, or until the cake is set and the chocolate sauce is bubbly. If you are subbing for the soy milk, I suggest almond rather than rice milk, since rice milk can tend to have abit of an aftertaste. -----

MIX WELL

1 CUP MILK
MIX WELL
POUR THE MIXTURE OVER THE CARAMEL
CHOCOLATE CAKE BATTER:
2 EGGS
BEAT FOR 1 MIN.
1/3 CUP SUGAR
BEAT UNTIL FLUFFY
2 TBSP OIL
1 TSPN VANILLA ESSENCE
MIX WELL
½ CUP FLOUR
2 TBSP COCOA POWDER
½ TSPN BAKING POWDER
SIEVE
MIX WELL
POUR THE CAKE BATTER OVER THE PUDDING MIXTURE
BOIL SOME WATER IN A CURRY PAN
PLACE THE MOULD
COVER THE LID WITH A CLOTH
STEAM FOR 35-40 MIN.
COOL DOWN COMPLETELY & KEEP IN FRIDGE FOR 1 HOUR
REMOVE FROM THE MOULD

Ingredients:
4 cups (1L) Milk
1 cup (240ml) Heavy cream
1/3 cup (40g) Cocoa powder
150g (5.3oz) Dark chocolate
1/2 cup + tbsp. (125g) Sugar
1/4 teaspoon Salt
1/2 cup (65g) Cornstarch (corn flour)
Directions:
1. Line a 9x5--inch (23X12cm) loaf pan with parchment paper. Set aside.
2. In a bowl stir cocoa powder and cornstarch, gradually add 1 cup (240ml) of milk, while constantly whisking, until incorporated and smooth. Strain through a fine sieve and set aside.
3. In a large pot combine 3 cups of milk, cream, sugar and salt. Place the pot over low-medium heat and let the sugar dissolve. Then pour in the cornstarch mixture and cook, over medium heat, stirring constantly until thickens, about 8-10 minutes. Turn the heat off, add chopped chocolate and stir until melted and combined. Strain through a fine sieve (optional).
4. Pour the batter into prepared pan, let cool to room temperature, then refrigerate for at least 6 hours.
5. Before serving dust with cocoa powder.
