Combine flour, baking soda and salt; add to creamed mixture and mix well. Add oats, cornflakes and coconut. Shape into 1" balls and place 2" apart on greased baking sheets. Flatten with a glass dipped lightly in flour. Bake at 350 degrees for 8-10 minutes or until lightly browned. Remove to wire racks to cool. For filling, beat cream cheese and sugar until smooth. Add the chocolate; mix well. Spread about 1 Tablespoon on half of the cookies and top each with another cookie. Store in refrigerator. -----

Christmas Crunchers
Christmas Crunchers:
Ingredients:
100 g (4 oz) soft margarine 75 g (3 oz) demerara sugar 100 g (4 oz) plain flour 100 g (4 oz) porridge oats 100 g (4 oz) chocolate chips
preheat the oven to 180 c / 350 f / gas mark 4
(1) Grease the baking tray with a little soft margarine. put the margarine and sugar into a bowl and mix them together with a wooden spoon.
(2) Add the flour, oats and chocolate chips to the bowl. mix everything together, using a spoon and then your hands to make a soft dough.
(3) Put the dough onto a floured surface and gently press it out or roll it out.
(4) Cut out circles of dough and put them onto the baking tray.
(5) Bake the crunchers in the oven for 12-15 minutes until they are golden brown. place the cookies onto a wire rack to cool.
