Ingredients:
????1 + 1/2 cup milk
????1/4 cup cornstarch
????2 tbsp cocoa powder
????1/4 cup sugar
Method:
1. In a bowl whisk together 1/2 cup milk , cocoa powder and cornstarch untill there are no large lumps.
2. Next, in a saucepan set over medium heat, put the remaining 1 cup of milk and sugar and bring it to a boil.
3. pour the milk & cornflour slurry into the saucepan. I like to use a sieve so no lumps enter the saucepan.
4. Cook this mixture on medium heat for a couple of minutes and whisk constantly to prevent lumps from forming.
5. When the mixture begins to thicken, take the pan off the heat and immediately pour the mixture into 2 ramekins.
6. Keep the pudding in the fridge for 4 to 5 hours, or until it is completely set.
7. Demould it carefully on a plate and dust some cocoa powder on top and enjoy!

1/3 CUP SUGAR
1 TBSP WATER
COOK UNTIL CARAMELISED
POUR IN A MOULD
KEEP ASIDE
MAKING PUDDING MIXTURE :
3 EGGS
1/3 CUP SUGAR
MIX WELL
1 TSPN VANILLA
1 CUP MILK
MIX WELL
POUR THE MIXTURE OVER THE CARAMEL
CHOCOLATE CAKE BATTER:
2 EGGS
BEAT FOR 1 MIN.
1/3 CUP SUGAR
BEAT UNTIL FLUFFY
2 TBSP OIL
1 TSPN VANILLA ESSENCE
MIX WELL
½ CUP FLOUR
2 TBSP COCOA POWDER
½ TSPN BAKING POWDER
SIEVE
MIX WELL
POUR THE CAKE BATTER OVER THE PUDDING MIXTURE
BOIL SOME WATER IN A CURRY PAN
PLACE THE MOULD
COVER THE LID WITH A CLOTH
STEAM FOR 35-40 MIN.
COOL DOWN COMPLETELY & KEEP IN FRIDGE FOR 1 HOUR
REMOVE FROM THE MOULD

Easy Chocolate Cobbler/ Hot Fudge Chocolate Pudding Cake/ Molten Chocolate Cake/Spicegenics
CHOCOLATE COBBLER:
Ingredients:
Unsweetened Cocoa Powder - 5 Tbsp
Sugar - 1 Cup
All-Purpose Flour/Maida - 1 Cup
Baking Powder - 1 Tsp
Unsweetened Cocoa Powder - 2 Tbsp
Salt - 1/4 Tsp
Sugar - 3/4 Cup
Instant Coffee Powder - 1/2 Tsp
Water - 1 Tbsp
Vanilla Essence - 1 Tsp
Melted Butter - 1/4 Cup
Milk (Room Temp:) - 1/2 Cup
Boiling Hot Water - 1 1/4 Cups
Method:
Grease an oven-safe pan with butter and keep aside.
Preheat the oven to 175 degrees C for 10 min.
Mix 1 cup sugar and 5 Tbsp unsweetened cocoa powder in a bowl and keep aside.
Take another bowl and mix All purpose flour, Baking powder, Salt, Unsweetened cocoa powder, and sugar without any lumps.
Mix Instant Coffee Powder and 1 Tbsp water in a small bowl and add to the flour mix. This is optional but it will enhance the chocolate flavour.
Add 1 Tsp Vanilla essence, 1/4 cup melted butter (salted/unsalted), 1/2 cup room temp: milk to the dry ingredients and mix well without any lumps.
Transfer the batter to the greased pan and level the top with a spatula.
You can use any shape of an oven-safe pan for baking the cobbler.
Sprinkle the sugar and cocoa mix on top of the batter. DO NOT MIX WITH BATTER. Just sprinkle over the batter.
Pour 1 1/4 cups boiling hot water over the topping. DO NOT STIR
Bake for 35 - 40 minutes or until the top is set in a preheated oven.
The bottom of the cobbler will still be a little loose.
Cool for 15 - 20 minutes before serving.
Serve warm with Ice cream.
Without Ice cream also cobbler tastes good.
You can store the cobbler in an air tight container in the refrigerator for 3 - 5 days OR in the freezer for up to 2 months.
Thaw the cobbler and reheat before serving.

¾ cup Cocoa Powder
4 tablespoons Butter + extra for greasing baking dish
½ cup Milk Chocolate Chips (I personally love Ghirardelli ones for their taste & texture)
½ cup Whole Milk (room temperature)
1 Egg Yolk (room temperature)
2 teaspoons Pure Vanilla Extract
¾ cup All-Purpose Flour (I always use unbleached, unenriched flour -- Whole Foods 365 Organic Flour is what I often use)
1 ½ teaspoons Baking Powder
¼ teaspoon Sea Salt
1 cup Boiling Water
Instructions:
Preheat oven to 350°F (176°C).
Butter a 8’’x8’’ baking dish.
Whisk ½ cup sugar with ¼ cup cocoa powder in a small mixing bowl and set aside.
Melt butter and chocolate chips together in a large mixing bowl. I put it in the microwave for 30 seconds before mixing together.
Slowly whisk in milk, egg yolk, and vanilla.
Add in flour, sugar, ½ cup cocoa powder, baking powder, and sea salt and give the dry ingredients a slight whisk to incorporate before mixing into the wet ingredients. This is the lazy method. Alternatively, you can whisk the dry ingredients in another large mixing bowl before combining into the dry ingredients.
Once the mixture is combined, add it to your greased baking dish and spread the batter to the edges, forming an even layer.
Evenly, top the batter with the cocoa powder-sugar mixture and then evenly add the boiling water right over the top of that. I know it sounds weird, but trust me, it’ll be magical.
Bake for about 25-28 minutes or until a toothpick inserted into an area at the edge comes out mostly clean.
Serve with homemade whipped cream or vanilla ice cream and enjoy!

Ingredients:
1 cup maida (all purpose flour)
1/2 cup super fine sugar
1/4 cup cocoa powder
2 tsp baking powder
1/4 tsp salt
3/4 cup warm milk
1/4 cup melted butter
1 tsp vanilla extract
FUDGE SAUCE:
1/2 cup caster sugar + 1/2 cup brown sugar
3 tbsp cocoa powder
1+1/4 cup boiling water
RECIPE NOTES-
This recipe is super quick. But just a few points to keep in mind so that you get all that beautiful gooeyness from the cake-
While mixing the dry ingredients for the cake batter, if your cocoa powder is lumpy, you can sift it in instead of simply adding it. Sifting will help remove all the lumps and give a smooth batter.
While pouring over boiling water, make sure to not mix it in. let the water just sit and the cake will bake beautifully.
When the cake is in the oven, check for the jiggly centre after 35 minutes of baking. If you think the cake is too liquidy from the centre, then you can bake it for an additional 10 minutes.
If you want to enhance the chocolate flavor even more, you can add 1/4tsp of coffee powder into the boiling water and then bake this cake.
