How To make Chile Cheese Cornbread Muffins
1 c Cornmeal
(blue or yellow) 1 c Flour
1/4 c Sugar
1 tb Baking powder
1 t Salt
1 Egg, beaten
1 c Milk
1 1/2 tb Butter
1 Onion, diced
1/4 c Poppy seeds
1 Can diced chiles,
Or fresh 1/4 lb Cheddar cheese,
Shredded
Melt butter in pan, add onions and saute until nicely brown. Take off head, add poppy seeds. In bowl combine dry ingredients and cheese and chiles. Combine egg and milk and add to dry stuff. Beat until mixed. Add onions and poppy seeds. Put into 12 muffin papers and bake at 400 degrees for 15-20 minutes or until brown. Additional cheese can placed on top of muffins if desired. WALT

Each come together super easily and pair together so well! Keep it on the sweeter side or mix in Greek yogurt to help keep it kid friendly! We’re ready for football and cozy fall weather. Ingredients:
Cornbread Muffins:
2 boxes Jiffy cornbread mix
15 oz can creamed corn
2 eggs
1-2 tbsp sour cream
3-4 oz green chiles (if you want some spice)
Chili:
1 lb ground beef or turkey
1/2 onion
2 tbsp minced garlic
1 tsp garlic salt
1 tsp paprika
1 tsp chili powder (or more if you need more heat)
(1/4 tsp cayenne, if you need more heat)
29 oz can tomato sauce
40 oz can hot chili beans
15 oz can corn
10 oz Rotel, diced tomatoes and green chiles
3 tbsp ketchup (or more if you need more sweet)
Few splashes of Worcestershire sauce

Easy Crockpot Chili Recipe:
2 pounds beef stew meat, cut into 2-inch cubes
1 pkg taco seasoning
1 can diced fire-roasted tomatoes
1 - 4 oz can diced green chilies
1 cube of beef bouillion
1 teaspoon dried minced onions
1/4 teaspoon garlic salt
1 can ranch-stule beans
1 can black beans (drained & rinsed)
1 can niblet corn, drained (11 oz)
Garnish: sour cream & shredded cheese
*In medium bowl, combine beef & taco seasoning, toss gently to coat
*Place beef in crockpot
*Add tomatoes, chilies, beef bouillion cube, minced onions, & garlic salt
*Cover & cook on low for 5 hours
*Then add beans & corn, stir, & cook for 30 more minutes.
*Garnish with sour cream & shredded cheese
*Serve with Cheesy Cornbread Muffins
Cheesy Cornbread Muffin Recipe:
2 - 7.5 oz boxes Jiffy Cornmeal mix
1 cup sour cream
1 cup shredded cheese
1/2 cup milk
1 teaspoon salt
Optional: Butter
*Preheat oven to 425 degrees
*Lightly grease 12-muffin pan
*In medium bowl, combine all ingredients except butter
*Spoon evenly in muffin pan
*Bake 15 minutes or until lightly browned
*Let cool 5 minutes
*Remove & serve warm with butter if you desire.

What you need for this Jalapeno Corn Muffin Recipe
¾ cup CORNMEAL ...we use a medium grind in this recipe
1¼ cup ALL-PURPOSE FLOUR
2½ tsp BAKING POWDER
½ tsp SMOKED PAPRIKA
½ tsp CHIPOTLE or regular chili powder
½ tsp SALT...unless the corn or butter already contains salt
1 cup MILK
2 Tbsp OIL or use melted butter instead
4 Tbsp HONEY
1 EGG
1 cup CANNED WHOLE KERNEL CORN drained
¼ cup PICKLED JALAPENOS, roughly chopped
¼ ONION, minced
1 cup freshly shredded CHEDDAR CHEESE plus ¼ cup for topping
fresh JALAPENO deseeded and sliced for topping...or you can use pickled slices for the topping
How to make Corn Muffins
Place rack in middle of the oven.
Heat oven to 400 degrees Fahrenheit.
Grease 12 muffin pan cups or line with parchment paper baking cups and set aside.
Combine dry ingredients in bowl.
Combine remaining ingredients in another bowl and mix, but reserve fresh jalapeno slices and a little cheese for topping.
Add the dry ingredients to the wet and stir until ingredients are moistened.
Fill prepared muffin cups evenly.
Top with fresh jalapeno slices and a very light sprinkling of cheese. Bake 20-30 minutes or until toothpick inserted into center comes out clean and muffins are golden brown. Allow to cool for
5 minutes before removing from muffin tins.
