How To make Green Chile Macaroni and Cheese
16 oz elbow macaroni
uncooked
8 oz ricotta cheese
1 c heavy cream
2 cloves garlic :
chopped
: salt and pepper to taste 1/2 c parmesan cheese
1/2 c mozzarella cheese
1 lg jalapeno :
minced
1/2 c Green Chile Sauce (recipe
: follows) 1 TB dried red pepper threads --
: for garnish 1 bn parsley or cilantro, chopped
: for garnish Boil the macaroni until al dente and set aside. Beat the ricotta, cream, and garlic together in a medium bowl. Transfer the ricotta-cream mixture to a large skillet. Over medium heat, stir in the parmesan, mozzarella, jalapeno, and Green Chile Sauce. Add the cooked macaroni and stir the pasta until incorporated. Adjust the seasoning with salt and pepper and transfer to wide soup bowls. Garnish with red pepper threads and parsley or cilantro. INGREDIENTS
1/2 lb. macaroni ($0.50)
2 Tbsp butter ($0.10)
2 Tbsp all-purpose flour ($0.02)
2 cups whole milk ($0.82)
8 oz. Monterey Jack cheese, shredded ($1.69)
2 4oz. cans diced green chiles ($1.78)
1/2 tsp ground cumin ($0.05)
1/8 tsp crushed red pepper ($0.02)
1/4 tsp salt ($0.02)
INSTRUCTIONS
1. Bring a large pot of water to a boil for the macaroni. Once boiling, add the macaroni and continue to boil until tender (7-10 minutes). Drain the macaroni in a colander.
2. While the macaroni is cooking, prepare the green chile cheese sauce. Add the butter and flour to a saucepot and cook over medium heat while stirring for about 2 minutes.
3. Whisk the milk into the cooked butter and flour mixture. Continue to whisk and cook over medium heat until the milk begins to simmer, at which point it will thicken to a cream-like consistency.
4. Turn the heat off. Begin stirring in the shredded Monterey Jack cheese, one handful at a time, until fully melted into the sauce.
5. Drain the canned green chiles and stir them into the cheese sauce along with the cumin, crushed red pepper, and salt. Taste and adjust the seasoning to your liking. Make sure it is heavily seasoned as the flavor will dilute slightly when mixed with the pasta.
6. Finally, combine the cooked and drained pasta with the green chile cheese sauce. Serve hot.

1 box of macaroni noodles

1/2 cup sharp cheddar cheese (for top if baking)
1/2 cup Monterey jacks cheese (for top of baking)

INGREDIENTS
8 ounces pasta of choice about 2 cups small macaroni
3 tbsp butter
1/4 cup flour
2 1/2 cups milk
1/2 tsp salt
1/2 tsp pepper
1 cup Monterey jack cheese, grated
1 cup cheddar, grated
1 cup diced fire roasted hatch chile peppers , or to taste

DIRECTIONS
Bring a large pot of salted water to a boil.

In another large sauté pan or skillet, melt the butter over medium heat. Add the flour and stir for about three minutes, until completely smooth and incorporated.

Pour in 1 cup of the milk in a thin stream while whisking. It might start out lumpy, but keep whisking and it will smooth out into a thick paste. Add the rest of the milk and whisk until smooth. Keep on medium heat, stirring occasionally, for about 10 minutes, until the sauce thickens.

Cook the pasta according the package, then drain well.

Remove the sauce from the heat and add the salt and pepper, diced hatch chile, and cheese. Stir until cheese is melted. Add the drained pasta and gently mix. Taste and adjust seasonings if needed and enjoy hot.
