Ingredients:
1 1/2 cups (200 g) all-purpose flour
1 tbsp (15 g) sugar
2 tsp (10 g) baking powder
1/2 tsp (3 g) salt
2 cups (200 g) grated cheese
a pinch of black pepper
1 egg
1/2 cup (120 ml) milk
1/2 cup (120 g) yogurt
1/4 cup (60 g) melted butter
On top:
paprika and 1/2 cup (50 g) grated cheese

1/4 of red capsicum, finely diced (optional)
1 cup grated cheese(s)
2 large eggs

In the clinic, I am often asked what is a healthy breakfast for prediabetes and what should you eat for breakfast if you are prediabetic. This recipe is the perfect start for a healthy breakfast idea for prediabetes.
Low Carb Egg Muffins (with Broccoli)
4 eggs
1/2 cup cheddar cheese
1 cup frozen broccoli
Preheat over to 375.
Spray muffin tin with non-stick cooking spray.
Layer frozen broccoli in muffin cups.
Combine egg and cheese in a bowl. Pour into muffin tins.
Bake for 15-20 min.
Serving Size 2.
Add additional protein and fiber!!!
