How To make Chicken In Black Bean Sauce
1 lb Boneless chicken breasts
2 tb Dry sherry
1 tb Soy sauce
2 ts Sesame oil
1 x
sauce:
1/2 c Chicken stock
2 ts Cornstarch
1/2 ts Sugar
1 ts Soy sauce
1 ts Hot chili paste
1 tb Vegetable oil
2 ea Cloves garlic
2 ts Minced fresh ginger
2 tb Fermented black beans
Cut chicken into 3/4 inch pieces. Combine sherry, soy and sesame oil in a 4-cup microwaveable casserole. Toss chicken in mixture, cover and marinate while preparing other ingredients. In a small boil combine stock, cornstarch, soy sauce, sugar, chili paste; set aside. Prepare garlic, ginger and black beans; set aside. Microwave chicken and marinade, covered at high for 4 to 6 minutes or until chicken is opaque and tender. Stir twice during cooking. Stand, covered, while making sauce. In a 2 cup glass measure, microwave vegetable oil at high for 1 minute or until hot. Stir in garlic, ginger and black beans and microwave, uncovered high for 1 minute or until fragrant. Stir in stock mixture until smooth and microwave at high for 1 1/2 to 3 minutes or until sauce comes to a boil and thickens. Stir once.
Drain liquid off chicken, pour black bean sauce over, stir and serve immediately.

Ingredients
300g chicken breast, cut into cubes or diced (or Quorn mince as vegetarian alternative)
1 Tbsp cooking oil
1 shallot, finely chopped
1 small green pepper, diced
1 small red or yellow bell pepper, diced
Marinade
1 Tbsp Lee Kum Kee Oyster Sauce
Sauce Mix
2 Tbsp Lee Kum Kee Black Bean Sauce (or Chilli Garlic Paste)
1 Tsp sugar
2 Tbsp water
Method
1. Marinate the chicken with Oyster Sauce and set aside.
2. Sauté shallots over medium heat for 2 minutes, add chicken to stir fry for 5 minutes.
3. Add in the peppers and sauce mix for a further 3 minutes until the chicken is cooked through.

Sizzling Chicken in a Black Bean Sauce
Sorry guys i had to remove the original audio track i had on the video and replace it with one of youtubes own..They said i was breaching copyright. The track i'm using now is the best of a bad bunch..I'm really disappointed because i had to delete the sound of my burner and the sizzling of the food...The track was originally royalty free but the artist has now decided it's not..I had to change a few of my videos because of this..If your reading this Mr Artist can i have it back..
I normally use Lee Kum Kee black bean sauce but i thought i would give this a try..This one is a lot less salty and find it more flavoursome and also you can add more..With Lee Kum you have to use less because of the salt content..

In all my videos i use a high power burner so cooking temperature's may vary cooking on a normal hob..Not all takeaways will ignite the food the way i do and just cook in the normal fashion..This is just my preference..The most important part is using the correct condiments and you will produce some amazing results..My subscribers are testament to that which i'm pleased about..

Recipe
1 large chicken breast pre cooked thinly sliced
Veg
1/2 red bell pepper
1/2 onion
1 green chill diced
2 cloves of garlic diced
2tbls shaoxing wine
1 heaped tbls of Amoy black bean garlic sauce
Pinch of white pepper
1 tsp oyster sauce
2 to 3 tbls dark soya sauce
1/2 tsp MSG
Method
Add some vegetable oil to the wok and add all your veg.Cook for a few minutes
Now add your pre cooked chicken shaoxing wine and the rest of your condiments
Toss through and then add about 50 ml of water to loosen the mix
Add a cornflour slurry to thicken..1 tbls of cornflour to 3 tbls of water..Done
