Raisins 50g / 1/3cup
Dried Apricot 50g / 1/3cup
Red & green cherries 50g / 1/3cup
Rum (or juice of choie) 100ml+-
Unsalted butter 90g / 8Tbsp
Sugar 70g / 1/3cup
Whole egg 2(55g+- per egg)
Sea salt 1.5g / 1/4tsp
Cake flour 150g / 1cup+1Tbsp
Baking powder 1.5 / 1/2tsp
Fresh milk 40ml
Vanilla extract 1/2tsp
Orange zest 1tsp
Pan size 21x6x8cm
Bake at 180°C / 350°F for 40-50 minutes

Traditional Christmas Cake Recipe / FRUIT CAKE
INGREDIENTS:
APRICOTS – 100g
FIGS – 100g
CHERRIES – 100g
TUTTI FRUITI – 100g
BLACK RAISINS – 100g
ALMOND POWDER – 100g
CASHEW NUTS – 150g
DRIED CANDIED GINGER – 1 TBS
ORANGE ZEST – 1 TSP
ALL PURPOSE FLOUR / MAIDA – 200g + 2 TBS FOR COATING THE FRUIT AND NUTS
CINNAMON POWDER – 1 TSP
GINGER POWDER – 1 TSP
CLOVES POWDR – 1 TSP
SALT – 1 TSP
BAKING POWDER 1 TSP
BUTTER - 200g
BROWN SUGAR – 150g
EGGS – MEDIUM SIZED 3
ORANGE JUICE – 30 ml
RUM – 90ml
METHOD:
TO A BOWL ADD THE APRICOTS, FIGS, TUTTI FRUITI, RAISING, CHERRIES , ORANGE ZEST AND CANDIED GINGER.
NOW TO THIS BOWL ADD ORANGE JUICE AND RUM, MIX WELL, AND COVER IT
YOU CAN SOAK THE FRUITS OVERNIGHT OR EVEN FOR 6-8 HOURS.
AFTER THE FRUITS HAVE SOAKED, ADD POWDERED ALMONDS AND CASHEW NUTS AND MIX.
THEN ADD MAIDA TO COAT THE FRUIT AND NUTS BEFORE ADDING IT TO THE BATTER MIXTURE.
TO THE MAIDA IN A BOWL ADD POWDERED GINGER, CINNAMOM AND POWDERED CLOVES ALONG WITH SALT AND BAKING POWDER AND MIX AND KEEP THESE DRY INGREDIENTS ASIDE.
IN ANOTHER BOWL BEAT BUTTER AND SUGAR TOGETHER TILL THE MIXTURE TURNS CREAMY. THEN ADD EGGS AND BEAT TILL THE WHOLE MIXTURE TURNS FLUFFY.
NOW ADD THE DRY INGREDIENTS TO THE BUTTER SUGAR MIXTURE AND MIX SLOWLY.
NOW ADD THE FRUIT AND NUT TO THE BATTER AND MIX SLOWLY.
TRANSFER THE BATTER INTO A BAKING TRAY LINED WITH PARCHMENT PAPER.
I HAVE USED A LARGE GLASS BAKING PAN, COATED WITH BUTTER. YOU CAN EVEN DIVIDE THE BATTER INTO MULTIPLE SMALLER CAKES.
BAKE THE CAKE FOR 70 MINUTES AT 180 C
AFTER REMOVING THE TRAY FROM THE OVEN, LET IT COOL FOR 10 MINUTES. AND DELICIOUS MIXED FRUIT AND NUT CAKE IS READY TO EAT.

One Hundred Year Old Great Grandma's Apricot Brandy Pound Cake Recipe
It’s absolutely NOT Christmas at our house without this Apricot Brandy Pound Cake on the Dessert Buffet. This recipe has been passed down from generation to generation and is still as delicious as I’m certain the very first cake every made. I remember my Grandmother baking it and then my Aunt and then me. I was finally trusted to bake the cherished family favorite. Ive been baking this Apricot Brandy Pound Cake for over 25 years. My family looks forward to each and every Christmas. I hope you’ll give it a try and make it part of your Christmas Dessert Celebration. Enjoy
Apricot Brandy Pound Cake
Combine
2 sticks soft butter and 3 c sugar. Mix well.
Add 6 eggs one at a time
Dry Ingredients:
3 c flour
1/4 t baking soda
1/2 t salt
Mix together well.
Wet ingredients:
1 c sour cream
1/2 t rum flavoring
1 t orange extract
1/4 t almond extract
1/2 t lemon extract
1 t vanilla
1/2 c Apricot Brandy
Add dry ingredients and wet ingredients to sugar and butter alternately.
Mix till just combined.
Pour into greased and very well floured bundt pan.
Bake 325 for 60 to 70 min. till toothpick comes out clean
Cool in pan for 30 min. Then gently shake sides and tip over carefully onto cooling rack.
Wrap well for the big day.

SOAKING FRUITS
in a large bowl add
100 g raisins
100g prunes
100 g blue berries
100 g crane berry
100 g black raisins
100 g apricot
50 g dried pineapple
50 g dates
1 tbsp orange zest
1/2 tsp lemon zest
1 tsp ginger powder
1 tbsp all spice powder (mix of nutmeg cloves and cinnamon)
1 cup orange juice
180 ml rum
mix it well,Cover with a cling film and close tight.
Let it soak overnight for alcohol,you can even soak for one week,I soak these mix fruits 2 days ago
After 2 days
Strain liquid completely
1 cup almonds cut into slices.
Add slice almonds into it.
Mix it well and set it aside.
To make the cake
In a large bowl or plate add 2 and a 1/2 cup all purpose flour
1 tsp baking powder ,Give it a good mix.
Add dry fruits into it ,give everything a good stir.This process helps to prevent the fruit from sinking to the bottom of the cake.Mix the flour and fruit thoroughly and stir through to break up any longer clumps of fruit.Mix until well combined and set it aside
Making the caramel
In a large vessel add
1 cup sugar
Turn the heat on and let this sugar melt down slowly you don’t want the heat very high cook on low heat.No need to stir just swirl the pan around.Once it’s started bubbling add 1/2 cup water.Boil for 10 seconds turn off the heat.Let it cool down completely .
For the batter
in a bowl add
200 g soft unsalted butter at room temperature
Beat until light and pale in colour .Into it add 200 g brown sugar
Mix until everything is nice combined,all of the sugar has dissolved and you are left with a nice light and fluffy mix,Now add 4 eggs at room temperature.Add eggs one at a time whisking in between each addition.Add 1 tsp vanilla essence.A pinch of salt.Mix it well
Into the fruit and flour mix add butter mixture
Into it add 120 ML of caramel that we have made earlier, Gently folds all the ingredients together.
Greased cake tin with melted butter,Brush butter paper with butter and place that into the cake tin
Poor mixture into the prepared cake pan.Garnish with some dry fruits
Into the preheated oven bake it on 160° for 90 minutes or until skewers comes out clean
Allow it to cool down slightly
Brush cake with rum
You can store this cake in a cool dark place for months
