Simple enough for any occasion, decadent enough for a special occasion and absolutely perfect for Christmas morning.
1 2/3 c. flour
2 T. sugar
2 t. baking powder
1/2 t. salt
1/2 t. cinnamon
1/4 t. nutmeg
1/4 t. ground ginger
1 c. milk
1/2 c. apple butter
1 large egg
2 t. vanilla
2 T. canola oil
Adjustments for waffles:
1 T. baking powder instead of 2 t.
2 eggs instead of 1
1 stick of melted butter instead of 2 T. oil

Apple Molasses (Cider Syrup)
Dating back to the 1600's, apple molasses, also known as cider syrup is a uniquely American preserve of apple cider made by reducing fresh cider to about 1/7th of its volume. You can make batches as large or small as you like, and if you skip the spice bouquet it has literally one ingredient.
The finished syrup has a rich apple flavor and sharp, tart taste I assume is from malic acid. It's fantastic in baked goods, and anywhere you'd use maple or honey, but has the benefit of having no added sugar.
Incredible on pancakes, in baked goods, on toast, a spoon, over roast chicken, with soft cheese, and so much more.

For this recipe you will need the following:
150g Plain White Flour
1TSP Baking Powder
2 Eggs
300ml Milk
3TSP Dark Brown Sugar
2TSP Caster Sugar
Olive Oil
1/2 Cooking Apple
Thatchers Haze

Star Wars Apple Cider Pancakes
Make 4 pancakes / time 15 min
4 granny smith apples sliced thin
2 Tbs refined coconut oil
¼ cup sugar
1 ½ tsp cinnamon
¼ tsp sea salt
1. Heat coconut oil in saucepan on medium heat.
2. Put sliced apples in heated saucepan. Add sugar, cinnamon and sea salt. Stir and let cook and soften up for about 10 to 15 min.
Pancake Batter
1 ¼ cup flour
2 tsp baking powder
1 ½ tsp cinnamon
¼ tsp nutmeg
1 tsp sea salt
1 1/3 cup apple cider non alcoholic
1 tsp vanilla
1 tsp coconut nectar or agave nectar
1 Tbs canola oil
1. In medium size mixing bowl, add flour, baking powder, cinnamon, nutmeg and sea salt. Whisk together.
2. In separate bowl, add apple cider, vanilla, coconut nectar and canola oil. Whisk liquid ingredients together.
3. Pour the wet into the dry and lightly mix. Don't over mix batter.
4. Heat non-stick skillet on medium heat. Coat skillet with oil or Earth Balance Buttery Spread. Pour batter on skillet to form pancakes. Flip after 1 or 2 min or until browned, depending on the heat of your stove.
