Apple Molasses (Cider Syrup)
Dating back to the 1600's, apple molasses, also known as cider syrup is a uniquely American preserve of apple cider made by reducing fresh cider to about 1/7th of its volume. You can make batches as large or small as you like, and if you skip the spice bouquet it has literally one ingredient.
The finished syrup has a rich apple flavor and sharp, tart taste I assume is from malic acid. It's fantastic in baked goods, and anywhere you'd use maple or honey, but has the benefit of having no added sugar.
Incredible on pancakes, in baked goods, on toast, a spoon, over roast chicken, with soft cheese, and so much more.
Boiled Cider Take #2 ~ Boiled Cider Syrup ~ Optional Canning Instructions
This version of Boiled Cider is perfect for drizzling over pancakes, waffles, ice cream or making a tasty cup of hot cider. Also great for your Holiday Gift Giving :)
1 gallon of fresh pressed cider
Optional: cinnamon sticks, orange peel, vanilla bean, cardamom or other warm spices
Store in the refrigerator or can to make it shelf stable (if it lasts that long)...
Canning Instructions:
Ladle hot syrup into hot pint or smaller jars leaving 1/4 headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
Process for 10 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

Vlogtober Day 11 - Pumpkin Pancakes & Apple cider syrup
My version of Pumpkin Pancakes & Apple cider Syrup
Apple Cider Syrup
3/4 cup apple cider
1/2 cup light brown sugar
1/2 cup maple syrup
2 TBS butter
cinnamon
Mix all ingredients together in a saucepan over medium heat, let come to boil, stir with whisk & let simmer for about 25 minutes. Pour into cup and let cool.
Pumpkin Pancakes
1 cup flour
1 TBS sugar
2 tsp. baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp pumpkin pie spice
2 eggs separated
1 cup almond milk
1/2 cup pumpkin
1 tsp vanilla extract
2 TBS oil
Mix dry ingredients together. Separate your egg yolks & whites & mix the yolks with the rest of the wet ingredients & then add into the dry. Whisk your egg whites until they form peaks and then gently fold into your batter. Place on a hot greased griddle 1/4 cup at a time and let cook a few minutes then flip and enjoy!
