Autumn Apple Cheesecake is a cheesecake for all seasons!
Autumn Apple Cheesecake is a great way to welcome the Fall season and to take advantage of all the wonderful and flavorful apples harvested during this time of year. This Autumn Apple Cheesecake is topped with Fuji apples as they are tart yet sweet and ideal for baking your favorite dishes/ treats. Apple pie spice was used when creating the topping as it pairs well with such flavorful apples as Fuji. Granny Smith and Gala apples will also work well this recipe so feel free to substitute.
The cheesecake filling is a traditional cheesecake with the addition of apple flavoring which enhances the overall flavor profile. And last but not least we round out this wonderful cheesecake with Georgia-grown pecans. This Autumn Apple Cheesecake is a real champion of a dessert and I highly recommend you head to the kitchen and try this recipe. You got this!
Here is the recipe:
Preheat oven to 350F/ 176C
190g/ 1 cup tea biscuits (crust)
79g/ 1/3 cup melted unsalted butter (crust).
28g/ 2 tbsp, brown sugar (crust)
600g/ 3-8oz packs cream cheese
120g/2/3 cup granulated sugar
100g/ ¼ cup sour cream
150ml/ ½ cup heavy whipping cream
171g/ 3 eggs
14g/1 tbsp. corn starch
4g/ 1 tsp. vanilla extract
1g. ¼ tsp apple flavoring
4 Fuji apples (peeled and sliced thin)
66g/ 1/3 cup granulated sugar
2g/ ½ tsp apple pie spice
31g/ ¼ cup pecans ((chopped)
Combine graham cracker crumbs, melted butter, brown sugar until sand-like texture.
Line bottom of spring form with parchment paper.
Form crust in spring form pan and press firmly.
Bake crust in oven at 350 F/176C for 10 mins and remove to cool.
In a large bowl, combine cream cheese and sugar mix until creamy.
Add eggs and combine.
Add vanilla extract and apple flavoring then combine.
Add heavy cream and combine.
Add sour cream and combine.
Add cornstarch and combine.
In a medium bowl, combine apples, sugar, and apple pie spice and set aside
Pour batter into spring form pan and rest on baking sheet with rim
Place apple mixture over layer of cheesecake and top with chopped pecans
Place hot water into baking sheet till the surface is covered (water bath).
Bake 350 F/176C for 60 minutes.
Turn off oven off and leave cheesecake in over for 30 minutes.
Remove and allow to cool to room temperature for 1 hour.
Place cheesecake in refrigerator to setup/chill for 6 hours/overnight.
Keep refrigerated until ready to serve
Homemade Apple Caramel Cheesecake Recipe
This apple cheesecake is a bit of work, but it easily makes up for it in looks and taste. There's nothing better than the texture contrast of the creamy cheesecake, the semi-soft sautéed apples, and the slight crunch from the crust. This cheesecake is big on flavor. It's full of the robust spices and flavors we expect from the Fall season. As I said, it's a bit of work, but when you take one bite, you'll melt into such pure bliss that you won't even care.

Apple Pie Topping:
2 lbs apples, medium diced (granny smith, fuji, Honeycrisp are all good options)
1 1/4 oz unsalted butter, room temp
6.5 oz granulated sugar
0.6 oz salt
1 1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 medium lemon, juice, and zest
2 oz apple cider
1/2 oz cornstarch
1 teaspoon vanilla
Cheesecake Crust
15 oz graham crackers crumbs
1 oz granulated sugar
1 teaspoon nutmeg
1 teaspoon pure maple syrup
1 tablespoon cinnamon
1/2 teaspoon salt
4.30 oz melted butter, room temp (you may need a bit more or less butter)
Cheesecake
24 oz Philadelphia cream cheese, room temp (Three 8 oz packages)
6 oz granulated sugar
1/4 teaspoon salt
1/2 cup sour cream, room temp
5 eggs, room temp
1/2 tablespoon vanilla extract
1 cup heavy cream, room temp
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 medium lemon, zest and juice
Water Bath
5-6 cups boiling water

Award Winning Apple Cheesecake!

Caramel Apple Cheesecake
Crust
1 1/2 cup crushed gingersnaps
1/4 cup granulated sugar
4 tbls melted butter
1/2 tsp kosher salt
Cheesecake
4 8oz packs of cream cheese softened
3/4 cups granulated sugar
1/2 cup lightly packed brown sugar
3 lg eggs
1/4 cup apple butter
3 tbls all purpose flour
2 tbls spiced apple cider
1/2 kosher salt
topping
4 granny smith apples diced
1/4 cup granulated sugar
1 tsp cinnamon
2 tsp lemon juice
1 tbls corn starch
1/2 cup light brown sugar, packed
Caramel sauce for drizzling
Preheat oven to 325 and line spring form pan with parchment paper and foil
In a lg bowl mix together gingersnaps, sugar, butter and salt.
Press mixture into prepared pan. set aside
make cheesecake
In lg bowl using a hand mixer beat cream cheese and sugars until no lumps remain, Add eggs one at a time then add apple butter and apple cider. Add flour and salt and beat until combined.
Pour mixture over crust.
Place pan in a roasting pan , place in over and pour water about half way up the sides of your spring form pan.
Bake until center of cheese cake only slightly jiggles about an hour and a half. Turn off heat , prop open oven door and let cool for an hour.
Remove foil and refrigerate overnight or no less than 5 hours.
Topping
In small saucepan add the apples, sugar, cinnamon, lemon juice and corn starch. Let simmer until soft and syrupy, about 5 minutes. Let cool and spoon apple mixture cooled cheesecake then drizzle caramel on top.
Making Caramel Apple Cheesecake
Cheesecake is both delicious and daunting when it comes to baking. Have no fear! You can totally do this. New York Style cheesecake gets a twist in the recipe!
Cheesecake:
Crust
15 grham crackers
a sprinkle of sugar
a sprinkle of cinnamon
1 stick of butter melted
Cheesecake
4 packages of cream cheese (8 ounces each)
3/4 cup milk
4 eggs
1 cup sour cream
1 tablespoon vanilla extract
1/4 cup flour
1 and 1/2 cups white sugar
2-3 teaspoons cinnamon
Topping
Cut and peel two apples and sprinkle over top.

Caramel Apple Cheesecake is a delightful dessert that combines the creamy richness of cheesecake with the sweet and tart flavors of caramel and apples. Here's a basic recipe to get you started:
Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup melted butter
1/4 cup sugar
For the Cheesecake Filling:
4 packages (8 ounces each) cream cheese, softened
1 cup sugar
1 teaspoon vanilla extract
4 large eggs
For the Apple Topping:
3 cups peeled, cored, and chopped apples (such as Granny Smith)
1/4 cup sugar
1/2 teaspoon ground cinnamon

For the Caramel Sauce:
1 cup caramel sauce (store-bought or homemade)
Instructions:
Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
In a medium bowl, combine graham cracker crumbs, melted butter, and sugar for the crust. Press the mixture into the bottom of the prepared springform pan. Bake the crust for about 10 minutes, then let it cool.
In a large mixing bowl, beat the cream cheese until smooth. Add sugar and vanilla extract, and continue beating until well combined.
Add the eggs one at a time, beating well after each addition. Make sure to scrape down the sides of the bowl to ensure everything is incorporated evenly.
Pour the cream cheese mixture over the cooled crust in the springform pan.
In a separate bowl, toss the chopped apples with sugar, cinnamon, nutmeg, and lemon juice. Spread the apple mixture over the cream cheese layer.
Bake in the preheated oven for about 55-60 minutes or until the center is set.
Allow the cheesecake to cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 4 hours or overnight.
Before serving, drizzle caramel sauce over the top of the cheesecake.
