How about a cinnamon streusel topped carmel apple with a cheesecake filling? Sounds almost too good to be true, but it is! This easy to make dessert is made simple by using an oatmeal cookie mix for the streusel and caramel ice cream topping for the sauce. Now you can have your apple crisp and cheesecake in one delicious bite-size bar. This is 1 of the 101 recipes in the Rada Apples recipe book.
Ingredients:
1 (1 lb. 1.5 oz.) pkg. oatmeal cookie mix
1/2 C. butter
2 (8 oz.) pkgs. cream cheese, softened
1/2 C. plus 2 T. sugar, divided
2 eggs
1 tsp. vanilla extract
3 Granny Smith, Gala or baking apples
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 C. chopped pecans or walnuts
1/2 C. caramel ice cream topping

Hi, welcome to Rada’s kitchen! My name’s Kristy, and today I’m sharing a recipe out of our Apples cookbook. I just went and picked these apples fresh off my apple tree. I’m making a dessert called Apple Streusel Cheesecake Bars. You’ll need 3 to 4 Granny Smith or wealthy apples and a 9” x 13” pan.
I’m using the Rada 9” x 13” Rectangular Baker. If you have a different kind of baking pan you’ll want to line it with foil and grease the foil. I’m not going to have to do this with the wonderful Rada stoneware.
In a large bowl we’re going to take this oatmeal cookie mix, a pound and 5 ounce package, and pour it in. I’m going to take a half cup of butter and put that in. Then with a pastry blender or this Rada Food Chopper or two knives we’re just going to cut that butter into that cookie mix until it gets crumbly. Then you’re going to reserve a cup and a half of that mixture.
Now what we’re going to do is press the rest of this into the bottom of the pan. Now we’re going to bake it in a 350 oven for 10 minutes.
While our crust is baking in the oven we’re going to prepare our cheesecake mixture. That consists of 2 8 ounce packages of cream cheese, a half a cup of sugar, and 2 eggs. Then a teaspoon of vanilla. We’re going to beat together until creamy.
Now we’re going to peel, core, and finely chop the apples. 3 to 4, depends on their size, I’ll probably just use 3. This Rada Vegetable Peeler makes peeling them super simple. Now I’m using the Heavy Duty Paring Knife. This is my apple coring and slicing knife. It’s just the right length and has that nice pointed tip and it’s very sharp. This is a great time to do fundraisers for schools, clubs, and churches, and what a great time to offer these as a fundraiser to supporters. They could really use these products in their kitchen. Now we’re going to finely chop these with the French Chef Knife.
Now while our cookie crust is still warm we’re going to spread our creamcheese mixture over that. To our apples we’re going to add 2 tablespoons sugar, half a teaspoon cinnamon, and a fourth teaspoon of nutmeg. Over the apples we’re going to put our remaining cookie mixture that we used for the crust. This is the same food chopper I used as a pastry blender, so it has multiple uses.
We’ll just sprinkle these on top. If you prefer walnuts, that’s fine, too. We’re going to put this in the oven for 30 to 40 minutes or until the filling is set.

Luscious cinnamon-vanilla cheesecake, tender spiced apples, crunchy streusel topping, and apple cider (or juice) caramel make this dessert sexy, messy, creamy, and crunchy. This Caramel Apple Streusel Cheesecake leaves nothing to the imagination.
Apple Cheesecake: a unique and delicious dessert!
Ingredients:
12 biscuits
50g melted butter
2 packets philadelphia
1 packet mascarpone
100g sugar
2 eggs
1 tsp vanilla
4 peeled and chopped apples
100g dark brown sugar
1 tbsp cinnamon
75g sultanas
100g brown sugar
100g plain flour
100g butter
50g oats
Mix apples, sugar, cinnamon and sultanas
Bake for 25 min at 180°C/350°F
Crush the biscuits and mix them with melted butter
Mix together brown sugar, flour, butter and oats until it becomes a crumble
Beat mascarpone, philadelphia and sugar, add eggs and vanilla.
In a spring form press down the biscuit base, then add the cheesecake filling, add the chopped apples in a layer, then sprinkle over the crumble topping.
Bake for 1 hour at 160°C/320°F
Allow to cool for at least three hours in the fridge
