Caramel Apple Cheesecake Bars Recipe
Apple Cheesecake Bars - just imagine, buttery crust topped with creamy cheese and tender apples and streusel topping made with rolled oats and almonds. And that is not all...everything is drizzled with caramel sauce... by far one of the best apple desserts. I really love the use of apples in a cheesecake and the caramel sauce is like the cherry on the top. Don't be scared for the long list of ingredients and steps, it goes really quick.

Ingredients
Makes about 15 servings
Crust
1 cup (2 sticks-220g) unsalted butter, room temperature
1 1/2 cups (190g) flour
1/2 cup (100g) ground almonds
1/2 cup (100g) brown sugar
1/4 tsp salt
1/2 tsp cinnamon
Cream Cheese Mixture
16 oz (500g) cream cheese, room temperature
1/2 cup (100g) sugar
1 tsp vanilla extract
2 eggs
1 tsp lemon zest
Apples
3 cups apples (about 3-4 apples) - peeled, cored, chopped
1 tbsp sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
Streusel Topping
1/2 cup (40g) rolled oats
1/2 cup (63g) flour
1/2 cup (100g) ground almonds
1/2 cup (1 stick-110g) butter, room temperature
1/2 cup (100g) brown sugar
1/4 tsp ground cinnamon
Caramel Sauce
1 cup (200g) sugar
1/4 cup (60 ml) water
1/2 cup (120g) heavy cream
2 tbsp (30g) unsalted butter, room temperature
1 tsp vanilla extract
1 tsp salt
Directions
1. Preheat oven to 350 F (180 C). Grease with butter a 9 X 13 inches baking dish.Line with parchment paper.
2. Prepare the crust. In a large bowl combine flour, ground almonds, sugar, cinnamon and salt. Add the butter and using a pastry blender or simply a fork cut in the butter until crumbles are formed.
3. Press the mixture onto the bottom of the prepared baking dish and bake for about 15-20 minutes until lightly golden brown. Set aside and let cool slightly.
4. While the crust is baking prepare the apples. Peel and core the apples, and cut into small pieces. In a medium bowl combine apples with sugar, cinnamon and nutmeg.
5. Prepare the cheese mixture by mixing the cream cheese with sugar, vanilla extract and lemon zest. Add eggs one at a time and mix until well combined.
6. Add the cheese mixture over the warm crust and spread evenly. Add the chopped apples on top of the cream cheese layer.
7. Prepare the streusel topping: In a large bowl combine rolled oats, flour, ground almonds, brown sugar and cinnamon. Add the butter and using a fork cut the butter until crumbly. Sprinkle the streusel topping over the apples.
8. Bake for about 30-35 minutes until set.
9. While the cake is baking prepare the caramel sauce. Place the sugar and water in a medium heavy bottomed saucepan over medium-high heat, and cook without stirring until sugar dissolves and gets a caramel color.
10. Remove the pan from the heat and add the cream. It will bubble a little bit.
11. Cook for about 1 minute stirring constantly with a wooden spoon until smooth.
12. Remove from heat and add butter and salt. Stir well until smooth. Pour into a small jar and set aside to cool until the cake is ready.
13. When the cake is ready, allow to cool at room temperature, cut into bars and serve drizzled with the caramel sauce.

6 tbsp (40 g) almond flour
2 flax eggs (2 tbsp ground flax seeds + 6 tbsp water)
1 1/2 tbsp (20 g) vegan butter (softened) or coconut oil
1 1/2 tbsp (20 g) granulated sugar
Pinch of sea salt
Apple Pie Filling:
2 (360 g) apples peeled, cored, and diced
1 tbsp lemon juice or lime juice
2 cups of (480 ml) water
7 tbsp (84 g) granulated sugar
3 1/2 tbsp (28 g) cornstarch
1 tsp cinnamon
Pinch of sea salt
Pinch of nutmeg
Pinch of ground cloves
Cheesecake Layer:
5.3 oz (150 g) firm tofu
2/3 cup (100 g) cashews soaked
1/2 cup (120 ml) coconut milk canned
1/4 cup (85 g) maple syrup or any other liquid sweetener
3-4 tbsp lime juice or lemon juice
3 tbsp (25 g) cornstarch
1 tsp vanilla extract
Caramel Sauce:
1 tbsp (20 g) maple syrup or any other liquid sweetener
1/4 cup (60 ml) coconut milk canned
1 1/2 tbsp (20 g) brown sugar or date sugar
1 slightly heaped tbsp (20 g) nut butter of choice
Pinch of sea salt

Ingredients for Crust
8 cinnamon graham crackers crushed
Ingredients for Cheesecake Filling
6 oz of cream cheese softened
½ cup of powdered sugar
½ teaspoon of vanilla extract
½ teaspoon of lemon juice
3 Tablespoons of sour cream
5 tablespoons of whipped cream
Ingredients for Apple Filling
1 Apples washed, peeled, and diced
¼ Tsp of ground cinnamon
1 Tbsp of white sugar
1 ½ Tbsp of brown sugar
¼ cup of water
Garnish
Whipped cream

Directions for Apple Filling
Add all your apple ingredients to a saucepan.
Cook on medium heat for about 8 minutes or until apples are tender.
Stir it often.
Remove from heat and set aside until ready to build parfait.
Directions for Crust
Crush cinnamon graham crackers until finely ground into crumbs { in a ziplock bag with a rolling pin or in a food processor }.
Set aside
Directions for Cheesecake Filling
To a bowl add cream cheese and sour cream, and beat with an electric hand mixer until smooth.
Add powdered sugar, vanilla extract, and lemon juice and mix together.
Fold in whipped cream.
Set aside.
Directions for Building Parfait
Add 3 heaping tablespoons of crushed graham crackers to a 5 oz cup.
Then add 4 Tablespoons of your cheesecake filling to the cup.
Add a thin layer of crushed graham crackers.
Add a layer of caramel sauce.
Add ⅓ of your apple mixture to the top of the caramel sauce.
Garnish with whipped topping and sprinkles of crushed graham crackers.

Ingredients:
2¾ cups apple fruit filling, divided
9 or 10-inch graham cracker crust (prepared)
8 oz cream cheese, softened
½ cup sugar
¼ tsp vanilla extract
2 eggs
¼ cup caramel topping
12 pcs pecans, halved plus 2 tbsp chopped pecans
⬇️ How to make Caramel Apple Cheesecake ⬇️
0:29 Preheat oven to 350 degrees F.
0:32 Add 2 cups of apple fruit filling to a prepared graham cracker crust then spread evenly. Set aside.
0:50 Beat together the cream cheese, sugar, and vanilla until smooth.
