How To make Apple Cheesecake(4 Hrs To Overnight)
2 envelopes unflavored gelatin
1/3 cup cold water
1 3/4 cups apple juice
1/2 cup sugar
3 egg yolks
beaten
3 packages cream cheese :
softened, (8 oz ea)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup whipping cream -- whipped
TOPPING 1/2 cup chopped dry roasted peanuts
2 tablespoons butter
1 cup applesauce
1/3 cup packed brown sugar
1/4 teaspoon ground cinnamon
Additional whipped cream, cinnamon and peanuts, optional
In a small bowl, soften gelatin in water; let stand for 2 minutes. In a saucepan over medium heat, cook and stir apple juice, sugar, egg yolks and gelatin mixture until gelatin is dissolved. Cool to room temperature. In a large mixing bowl, beat the cream cheese, cinnamon and nutmeg until smooth. Gradually beat in gelatin mixture until smooth. Chill until slightly thickened, about 20 minutes. Fold in cream. Pour into an ungreased 9 in springform pan. Chill 4 hours or overnight. In a saucepan over medium heat, brown peanuts in butter for 2 minutes. Add applesauce, brown sugar and cinnamon; cook and stir for 5 minutes. Cool. Spread over top of cheesecake. If desired, garnish with whipped cream, cinnamon and peanuts.

Ingredients:
Dough
- 90 grams whole wheat flour (1/2 cup)
- 140 grams of instant oatmeal (1+1/2 cups)
- 70 grams of cane sugar (1/3 cup)
- 1 teaspoon baking powder
- 100 grams of butter
Filling:
- 400 grams cream cheese
- 70 grams of sugar (1/3 cup)
- 1/2 teaspoon vanilla extract
- 2 eggs
- 2 apples
Bake in preheated 350°F (180°C) oven / 45-50 minutes.

This no bake cheesecake is SO delicious, and SO easy to make.

Ingredients
Crust
2 boxes Simple Mills Sweet Thins
3 tablespoons butter (softened)
Cheesecake
8 ounces cream cheese (Kite Hill)
1 tablespoon lemon juice
1 cup cashews (soaked)
1⁄2 cup vanilla greek yogurt (Kite Hill)
1⁄2 cup maple syrup
Apple Topping
2 Honeycrisp apples
1 lemon zest
1⁄2 teaspoon cinnamon
2 tablespoons light brown sugar (OR coconut sugar)
1 tablespoon butter
Pecan Topping
1 cup pecans
3 tablespoons light brown sugar (OR coconut sugar)
Instructions
Empty 2 boxes of Simple Mills Sweet Thins into a food processor with 3 tablespoons of softened butter until it forms a wet sand consistency to create the crust
Pour crust into a pie pan and pat down to flatten, set aside
Add all cheesecake ingredients into a blender and blend until smooth
Pour cheesecake batter into pie pan on top of crust
Place cheesecake into the fridge to set for a minimum of 4 hours/to overnight
Cut apples into thin slices
Add butter to a saucepan to melt, then add apple slices, brown sugar, cinnamon, & lemon zest
Cook apples for 10 minutes until golden, juicy, & caramelized
In a different saucepan, on low heat, add pecans & toast for 3-5 minutes
Add brown sugar to toasted pecans and cook until sugar is melted and has coated the pecans
Remove from heat, place on parchment paper to cool, and roughly chop into small pieces
Once cheesecake has set in the fridge, take out and add apple topping and sprinkles pecans on top

CARAMEL CHEESECAKE
24 ounces (678g) cream cheese, room temperature
1 cup (225g) packed light brown sugar
3 tbsp (24g) all purpose flour
1/2 cup (115g) sour cream, room temperature
1/2 cup caramel sauce, above
1 tsp vanilla extract
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
3 large eggs, room temperature
CARAMEL SAUCE
1 cup (207g) granulated sugar
1/2 cup (120ml) water
1/4 cup (56g) unsalted butter
1/2 cup (120ml) heavy whipping cream
1/2 tbsp vanilla extract
1/2 to 1 tsp salt
CINNAMON APPLES
1 1/2 apples, thinly sliced
2 tsp lemon juice
1/2 tsp cinnamon
Pinch of nutmeg
4 tbsp (56g) brown sugar
1 tbsp butter
CINNAMON WHIPPED CREAM
3/4 cup (180ml) heavy whipping cream
6 tbsp (43g) powdered sugar
1 tsp vanilla extract
3/4 tsp ground cinnamon
