Strawberry Almond Pound Cake

Ingredients
Cake:
1 1/2 cups granulated sugar
1 1/2 sticks (12 tablespoons) unsalted butter, plus more for buttering the pan, slightly softened
3 large eggs
1/2 cup sour cream
1 teaspoon almond extract
1 1/2 cups all-purpose flour
1/4 teaspoon kosher salt
1 pound strawberries, hulled, half sliced and half cut in half
Crumble:
1/4 cup brown sugar
1 1/2 tablespoons all-purpose flour
1 tablespoon salted butter, cold and cubed
1/4 teaspoon kosher salt
1/4 cup sliced almonds
Glaze:
1 cup confectioners' sugar
1 tablespoon plus 1 teaspoon lemon juice
Directions
For the cake: Preheat the oven to 325 degrees F.
In the bowl of an electric mixer fitted with a paddle attachment, cream together the granulated sugar and butter. Add the eggs 1 at a time, mixing after each addition. Add the sour cream and almond extract and mix to combine. Turn the mixer to low and gradually add the flour and salt and mix until well combined, scraping the bowl. Fold in the sliced strawberries.
For the topping: Combine the brown sugar, flour, butter and salt in a medium bowl and cut together using 2 knives or a pastry cutter until it resembles crumbs. Mix in the almonds.
Generously butter a 10-inch cast-iron skillet. Pour the batter into the skillet and even out the surface. Press the remaining halved strawberries into the surface of the batter cut-side down, leaving them mostly exposed. Scatter the crumble over the top of the batter. Bake until a toothpick inserted in the center does not come out totally clean but isn't wet with batter either, about 1 hour. Let the cake sit in the skillet for 30 minutes. Meanwhile, make the glaze.
For the glaze: Whisk together the confectioners' sugar and lemon juice. Using a fork or whisk, drizzle over the cake. Serve directly out of the skillet.

almond crushed 1/2 cup
for cake batter:
Soften unsalted Butter 200g
Sugar 1 cup 200g
vanilla essence 1 tsp
eggs 4 room temperature
all purpose flour 1,1/2 cup 175g
baking powder 1 tbsp
almond crushed 1/4 cup 25g
for glaze:
Any jam 2-3 tbsp
water 3-4 tbsp

Lemon Almond Pound Cake
Ingredients:
1 ½ cups all purpose flour
3 tsp baking powder
¼ tsp salt
½ cup almond flour
1 stick unsalted butter
¾ cup white sugar
The zest of 1 large lemon
1 tsp vanilla extract
¼ tsp almond extract
2 large eggs
¾ cup almond breeze
Lemon Glaze Ingredients:
½ cup powdered sugar
2-3 tbsp fresh lemon juice
Toasted almonds optional
Instructions:
Preheat the oven to 350F and grease, flour and line a 8x4 inch loaf pan.
In a bowl combine the flour, baking powder and salt. Set aside.
In another large bowl cream together the softened butter, sugar, lemon zest and vanilla.
Add the eggs and mix to combine.
Add the dry ingredients, the almond flour and almond milk and mix until combined.
Transfer the batter to your prepared loaf pan and bake for 40-45 minutes. Do the toothpick test. If there’s no wet batter the cake is ready.
Allow to cool in the pan for 5 minutes, then carefully take it out and allow to cool completely.
To make the glaze combine powdered sugar and lemon juice. Add more lemon juice for a thinner glaze. Drizzle over the cake and optionally top with flaked almonds.

Ingredients
3 eggs
150g sugar (if you prefer not sweet, keep it at 130g)
150g oil (I used Mazola brand oil)
150g self raising flour / (150g plain wheat flour + 1 tsp of baking powder)
2 tbsp fresh milk / any other milk (used Dutch lady brand)
1/2 tsp vanilla essence
1/4 cup of almond flakes / nibs, roasted
1-2 tbsp roasted nibs to be added before baking
1-2 tsp almond flour, optional (can get from bakery shop)
2-3 tsp chocolate rice / chocolate chip, optional
24cm × 10cm x 6cm / 9 inch pan used for baking

Ingredients
6 Eggs
2 Tablespoons (32 grams) Butter
6 Tablespoons (80 grams) Powdered Sweetener
1.5 Cup (140 grams) of Almond Meal
3 Teaspoons (12 grams) Baking Powder
1 teaspoon Vanilla Extract
Instructions
Prepare all ingredients and heat the oven to 200 Celsius or 390 Fahrenheit. Butter should be at room temperature and sweetener, depending on what is your favorite.
Place whole eggs together with the sweetener into the kitchen machine and mix well until fluffy light consistency.
Once your eggs are whisked, add all other ingredients and whisk thoroughly until all combine.
Once all is combined, pour the whole batter into a loaf pan and bake for 20 minutes. Cover the loaf with aluminum foil to avoid burning the top, and bake for another 20 minutes.
Notes
Extra fluffy - whisk egg whites separately and gently fold them into the cake mixture towards the end
Taller pound cake - if you wish to have your almond flour pound cake taller, use a smaller pan.
Parchment paper - cover your baking pan with parchment paper to ease up the cleaning afterward
Aluminum foil - cover your pound cake in the middle of baking to prevent the cake from burning on top.
Wooden stick - poke into the center of the pound cake, ensuring your cake is fully baked.
