How To make Mom's Zucchini Cake
1 Yellow cake mix
4 Eggs
1/2 c Vegetable oil
1 ts Cinnamon
1 tb Vanilla
2 c Grated zucchini; don't peel
1/2 c Raisins
1/2 c Walnuts
Recipe by: Hammond Times newspaper, 93/08/11 Beat cake mix, eggs, oil, cinnamon, and vanilla together for 6-7 minutes. Fold in grated zucchini, raisins and ntus. Bake in a greased and floured 10-inch tube pan at 350' for 40-50 minutes. May use toothpick test. Cake may be glazed or sprinkled with powdered sugar, but Rosemay say's her mother's whipped frosting (see recipe) is out of this world. -----

This is the best homemade zucchini cake recipe. Learn how to bake a delicious zucchini cake at home. The zucchini, courgette or baby marrow is a summer squash, a vining herbaceous plant whose fruit are harvested when their immature seeds and epicarp are still soft and edible. It is closely related, but not identical, to the marrow; its fruit may be called marrow when mature.

1 cup Zucchini
1 tsp lemon zest
1 tsp lemon juice
1/2 tsp baking soda
1/2 cup oil
2 eggs
pinch of salt
1/2 cup sugar
1.5 cups self raising flour
bake at 180c, 40-50 mins

INGREDIENTS
2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 cup light brown sugar (packed)
1 1/2 tsp ground cinnamon
2 zucchini (grated)
1/2 cup walnuts or pecans (optional)
2 large eggs
1/3 cup cooking oil
1/2 cup milk
1 1/2 tsp vanilla extract
9 x 5 x2 loaf pan
Bake at 350ºF / 176ºC for 50 minutes or until a toothpick comes out clean
If using an 8 x 4 x 2 loaf pan bake for 55 to 60 minutes
