We think these petite little muffins are one of the cutest ways to celebrate the flavors of autumn! The delicious combination of earthy pumpkin puree, chocolate chips, plenty of warm spice, and a tender crumb make these a scrumptious fall treat.
✨ To make regular-size muffins with this pumpkin muffin batter, fill your muffin cups 2/3 full with the batter and increase the baking time to 18- 20 minutes or until the toothpick test tells shows they are done!

MINI PUMPKIN CHEESECAKES:
Crust:
1 1/2 cups (1 sleeve) graham crackers, crushed
2 1/2 tbsp sugar
1/3 cup butter, melted
Cheesecake:
8oz cream cheese, softened
1 egg
1/4 cup sugar
1/2 tsp vanilla
Pumpkin:
7.5oz pumpkin puree
1/2 cup evaporated milk
1 egg
1/8 cup brown sugar
1/8 cup sugar
1/2 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp salt
Preheat oven to 350. Put your graham crackers and sugar in a bowl and mix. Add in the melted butter and mix until well combined. Spoon an even amount of the mixture into greased muffin cups and then press firmly. Bake for about 10 mins. While the crust bakes, make the cream cheese layer. Add all ingredients and mix until well combined. Sit in the fridge to chill for at least 30 mins. Once the crust is out and cooling and the cream cheese mixture is hanging out in the fridge, put together your pumpkin layer. Put all ingredients in a bowl and mix well. Once the crust is completely cooled, add an even layer of cream cheese mixture, followed by pumpkin mixture. Bake for about 45-50 mins or until set. Let cool, pop out of muffin cups and serve.

Mini Pumpkin Muffins

1 1/2 cups All Purpose Flour
1tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1tsp Pumpkin Pie Spice
1 1/3 cups Pumpkin Puree not pie filling
1/3 cup Vegetable Oil
2 large Eggs
1 1/4 cups Sugar
Start by preheating the oven to 350
Now spray your mini muffin tin with some non stick spray.
In a medium size bowl mix together these ingredients
Flour, baking powder, baking soda,salt and pumpkin pie spice
In another bowl mix together these ingredients.
pumpkin puree, oil, eggs and sugar
mix the wet ingredients in with the dry and stir just until combined
Evenly divided the batter in the muffin tin each one should be around 3/4 of the way full.
Now bake for 15 - 18 minutes or until done. ( mine cooked for 15 minutes)
let them cool in the pan for 5 minutes before removing them to a wire rack to cool completely.
