How To make Honey Wheat Pumpkin Muffins
1 c Libby's solid pac Pumpkin
1 c Milk
1/4 c Melted butter
1/4 c Honey
1 Egg slightly beaten
1 c Whole wheat flour
1 c All purpose flour
1/2 c Sugar
1/4 ts Salt
1/2 c Chopped walnuts
Preheat oven to 400?... Combine pumpkin, milk, butter, honey, and egg mixing well... Combine flours, sugar, baking powder, salt an nuts then add to pumpkin mix until just moistened... Spoon into greased medium sized muffin pans, filling each cup half full and bake 15 min.

WHOLE WHEAT PUMPKIN MUFFINS SWEETENED WITH MAPLE SYRUP
Well, fall is almost here and I can't wait to share these healthy whole wheat pumpkin muffins! They are made with whole wheat flour and sweetened with maple syrup. They are also dairy free. This is the season for pumpkin everything, right!? good think I like pumpkin. Even Rosco (my fur baby) likes pumpkin! I'll include the recipe below for these yummy healthy pumpkin muffins.
PREHEAT YOUR OVEN TO 325 DEGREES F AND GATHER YOUR INGREDIENTS:
⅓ cup melted coconut oil
½ cup maple syrup
2 eggs
1 cup pumpkin (I'm using a pure canned pumpkin from Libby's).
¼ cup milk, regular, coconut or almond. (I'm using almond).
2 teaspoons pumpkin spice blend (or 1 teaspoon ground cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg, and ¼ teaspoon ground cloves)
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
1 ¾ cups whole wheat flour (I'm using 100% Whole Grain Flour from King Arthur).
⅓ cup old-fashioned oats
Optional Toppings: I'm using Turbinado sugar and old fashioned oats.

Lower sugar and using whole wheat flour muffins

Pumpkin Honey Muffins
Preheat oven to 325 degrees
Grease muffin pan or fill with cupcake papers
Ingredients:
⅓ cup melted coconut oil olive oil
½ cup honey
2 eggs
1 cup pumpkin purée
¼ cup milk (or almond milk)
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon cinnamon
½ teaspoon ground ginger
¼ teaspoon nutmeg
¼ teaspoon allspice
1 ¾ cups whole wheat flour
⅓ cup old-fashioned oats, plus more for sprinkling on top
Instructions:
In a large bowl, beat the oil and honey together with a whisk.
Whisk the eggs, and add to bowl.
Mix in the pumpkin purée and milk.
Add the baking soda and spices.
Add the flour and oats and mix with a large spoon, just until combined.
Divide the batter evenly between the muffin cups.
Sprinkle the tops of the muffins with a small amount of oats.
Bake muffins for 22 to 25 minutes, or until a toothpick inserted into a muffin comes out clean.
