2 eggs -- slightly beaten 2 cups sugar 1/2 cup oil 1 cup solid pack pumpkin 2 1/4 cups flour 1 tablespoon pumpkin pie spice 1 teaspoon baking soda 1/2 teaspoon salt 1 cup chopped cranberries Combine eggs, sugar, oil and pumpkin; mix well. Combine dry ingredients in bowl; make a well in center. Pour pumpkin mixture i nto well; stir just until dry ingredients are moistened. Stir in cranberries. Spoon batter into 2 greased & floured 8 x 3 3/4 x 2 1/2 inch pans. Bake at 350 for 1 hour.

Check out this recipe for Mimi’s Pumpkin cranberry quick bread! This healthy recipe is insanely versatile and it can also be made into muffins! We use a basic boxed oat bread from Krusteaz and chock it up with real pumpkin, fresh cranberries, flax seeds and walnuts. You really can’t mess this bread up so try your own variations! Mimi is my husbands mom—she’s always trying new things in “Mimi’s bread”. One thing I will say is that when she sends us home with one, it never lasts long in our house or anyone else’s for that matter!
-Krusteaz oat bread (follow the recipe for measurements of oil and water) -15 oz of canned pumpkin -1.5 C chopped walnuts (I used chopped but Mimi usually fresh grinds her’s) -2/3 bag fresh cranberries (however much you like cranberries really) -1/2 C ground flaxseeds
Directions- preheat oven to 400 degrees. Combine all ingredients in a bowl and mix until combined. Bake in a lightly oiled bread pan for 40-42 minutes. Enjoy!

Citrus-Cranberry Pumpkin Bread
My family's favorite fall recipe! This bread is so yummy it goes quickly. Note that my video has the amounts doubled because I made 2 loaves. Here is the recipe for one loaf:
1 3/4 cup flour 1 tsp salt 2 tsp pumpkin pie spice 1 cup sugar 1 T baking powder 1/4 cup dried cranberries 1/4 cup orange juice + 1/2 tsp citrus zest 1/2 cup water + 1 T flax seeds (soak for 5 minutes) ** 1/3 cup oil 1/2 tsp almond extract 1/8 tsp vanilla extract 1 cup canned pumpkin
optional: pumpkin seed, nuts, oats
Preheat oven to 350. Mix all dry ingredients. Add wet ingredients and mix well. Pour into greased loaf pan and bake 40-55 minutes. Let cool 20 minutes before cutting and enjoy.
** In my video I did not have flax seed so I used ground flax. I still used the same amount of water that the recipe calls for. I would suggest using less water if you use ground flax since it takes the bread longer to cook due to the excess liquid. This contributes to the large cooking range I have given.
