How To make Cranberry Fruit Nut Bread
2 cups flour -- all purpose
1 cup sugar
1 1/2 teaspoons Baking Powder,Double-Acting
1/2 teaspoon Baking Soda
1 teaspoon salt
1/4 cup Shortening,Vegetable
3/4 cup Orange Juice,Fresh
1 tablespoon Orange Peel,Grated
1 egg -- well-beaten
1/2 Cup nuts
chopped
1 1/2 Cups cranberries :
coarse chop
Sift together flour, sugar, baking powder, soda and salt. Cut in shortening until mixture resembles coarse cornmeal. (Do in food processor?) Combine orange juice and peel with beaten egg. Pour all at once into dry ingredients, mixing just until dampened. Carefully fold in nuts and cranberries. (If frozen cranberries are used, put through food chopper in frozen state) Spoon into greased loaf pan (9x5x3) . Spread corners and sides slightly higher than center. Bake in 350 degree oven for about 1 hour, until crust is golden brown and toothpick inserted comes out clean. Remove from pan and cool. Store overnight for easier slicing.
This is the original Ocean Spray recipe and is delicious. I sometimes add a coupe of tablespoons of chopped dried apricots to this.

HOW TO MAKE SOFT NO KNEAD FRUIT BREAD
We can make this Sweet Bread or no knead Fruit Yeast Bread in five simple steps
1.Prepare the dough
2.First Proofing
Wrap the bowl with a plastic film and let the dough stand rise in a warm environment for 1 hour or until it gets almost doubled in size.
3.Shape the dough
4.Final rising
Let the dough sit and rise in warm environment for 90 minutes.
5.Bake the Fruit Bread
Bake the Fruit bread at 350 F preheated oven for 34-35 minutes.Reduce the baking temperature to 325 F and bake for another 4-5 minutes
The top of the fruit bread or fruit loaf will start browning at around 25 minutes of baking.It doesn’t mean our dry fruit bread is done.
At this point if we take it out, the center of the fruit yeast bread will have a doughy texture and it will smell very “yeasty”
So wait for until the fruit bread is baked properly.
If you find the top getting too dark, you can tent the top with an aluminum foil at around 25 minutes and then continue baking.
This is one of the Best Fruit Bread Recipes ,as the fruit bread has nice spice flavor and they are soft and is filled with lots of dry fruits.As a bonus it does not require kneading as well.

NO Knead Cranberry Honey Walnut Bread
The recipe is so easy and it doesn't take a lot of steps to make! I used cranberries and walnuts in my bread but you can use something else if you would like. So if you want to make an easy bread recipe, this is the one to go with. Give it a try, you wont be dissapointed.

Ingredients:
4 cups (1 lb. 1 oz / 482 g) all-purpose or bread flour
1/2 scant teaspoon instant dry yeast
2 teaspoons salt
1 3/4 cup (14 fl. oz / 415 ml) cool water (around 70°F)
1 cup (5 oz / 142 g) dried cranberries
