Cute Cranberry Hazelnut Tarts
Ingredients
2/3 cup quick-cooking rolled oats
1/2 cup whole wheat flour
1/4 cup all-purpose flour
1/2 8 ounce package reduced-fat cream cheese (Neufchatel), softened
1/4 cup butter, softened
1/4 cup packed brown sugar *
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/3 cup packed brown sugar*
2 teaspoons cornstarch
1/2 teaspoon ground cinnamon
1 1/4 cups fresh cranberries
2/3 cup water
1/4 cup hazelnuts, toasted** and chopped
Preparation
Preheat your oven to 350 degrees
For sour dough:
In a tiny bowl, blend oats, whole wheat grains flour, and all-purpose flour; put aside.
Inside a big bowl, join cream cheese along with butter; whip using an power mixer with moderate to high speed for thirty seconds. Include the 1/4 cup brown sugar, your baking soda, a 1/4 tsp cinnamon, plus the salt; whip till properly mixed. Beat in as much of the oat combination as you can with the blender. With a real wood spoon, stir in the oat concoctions. Separate dough equally amongst twenty-four 1-3/4-inch muffin cups. Press dough at the base and up the side of every cup.
For cranberry filling:
In a small pot, incorporate the 1/3 cup brown sugar, the cornstarch, plus the 1/2 teaspoon cinnamon. Add cranberries and the water. Cook and stir over medium heat till thickened plus bubbly. Stir in 1 / 2 of the hazelnuts. Scoop filling equally into dough-lined muffin cups. Spread with the outstanding hazelnuts. Cook for 15 to 20 min's or till the edges of the crusts are gold colored. Chill in muffin cups for 5 minutes. Take out tarts from muffin cups; cool on the wire rack. Makes 24 tarts.

This loaf is a cake with lots of dried fruits (raisins, dried cranberries, dried cherries, dates, figs, prunes, and apricots) and nuts (walnuts, pecans, almonds, and/or hazelnuts) with just enough batter to hold it all together. What I also love about this cake is that it does not call for butter or even oil, instead, the ingredients are bound together with flour and beaten eggs.
