How to Make: Spinach and Feta Muffins
Looking for a breakfast that is both satisfying but also sustaining? So often we grab a muffin or donut with our coffee in the morning, if we’re grabbing any food at all, and dash out to start out day. But that also means we haven’t fueled our body and mind with the type of energy it will need to really get the day off right. I’m a sucker for a good muffin in the morning, usually blueberry or morning glory, but in an effort to find better ways to eat my breakfast, I’ve sought out alternatives to my usual sugar filled morning munch. This spinach and feta muffin was exactly what I was looking for.

Cheese and Spinach Savory Muffins - really simple recipe that you can make with the kids. Good for breakfast or school lunch.

Make 12 muffins
Ingredients:
5 Oz (140g) fresh spinach
6 oz (170g) cheddar cheese
2 eggs
1 tbsp melted butter
2/3 cup (160ml) milk
5 oz (140g) yogurt
3-4 garlic cloves
1½ cups (190g) flour
1½ tsp baking powder
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp nutmeg
Directions:
1. Preheat oven to 355F (180C).
2. In a large bowl beat eggs, milk, yogurt and melted butter. Add shredded cheese, roughly chopped spinach, salt, pepper, nutmeg crushed garlic. Stir.
1. In medium bowl mix flour with baking powder. Fold flour mixture into milk mixture until just combined.
3. Divide evenly among 12 greased muffin cups.
4. Bake 25 minutes.

Cheese Muffins || Spinach Cheese Savoury Muffins Recipe || Breakfast ideas|| Lunch box recipes
Delicious savoury muffins packed full of spinach and cheese; perfect for a family breakfast, lunch or a kids afternoon snack!
Preparation time: 5 mins
Cooking time: 20 mins
Makes 6 Muffins
Ingredients
2 Eggs
Salt & Pepper
2 tbs butter
1 cup spinach
3/4 cup grated cheese(I've used cheddar & mozzarella mix)
2 tbs greek yogurt
1 cup All purpose flour
1 tsp baking powder
Preheat the oven to 200c / 400f and line a muffin tin with 6 muffin cases.
Gently whisk the eggs in a large bowl and add salt and pepper. Mix in the butter, grated cheese, chopped spinach and yogurt.
Finally, add in the flour, half cup at a time, and add baking powder with the second half of the flour. Mix just enough until all the ingredients have combined.
Divide the mixture between the 6 muffin cases and bake in the oven for 20-25 minutes until cooked through (a skewer stuck into the middle should come out dry).
These muffins can be frozen once they have cooled completely. To defrost simply leave out for a few hours or overnight.

Makes 5 muffins
1 Box Jiffy Corn Muffin Mix
1/3 Cup Whole Milk
2 Large Eggs
3 Jalapenos, Seeded and Minced
1/2 Cup Sharp Cheddar Cheese, Coarse Grated
1 Large Scallion, White and Green parts
(or 3 Tbsp grated onion & juice)
1 Tbsp Granulated Sugar
