Apple Cider Donut Cake Recipe
Apple Cider Donut Cake is a fluffy cake packed with apple cider flavor, then topped with cinnamon sugar to make a delicious treat!
1 C apple cider
3/4 C apple sauce
3/4 C oil
3 eggs
2 tsp vanilla
2 C flour
1 1/2 C oat flour
1 1/2 C sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Mix all ingredients and bake in a well-greased bundt pan. Bake at 350° for 45-50 minutes. Cool for 10 minutes then invert onto a serving platter and brush with 3 Tbsp melted butter and sprinkle with 1/4 C sugar and 1/2 tsp cinnamon OR for a glaze mix 1 C powdered sugar and a couple Tbsp of apple cider and drizzle over warm cake. Enjoy!

Ingredients
Cake
3 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon salt
1 cup apple cider
⅔ cup applesauce
¾ cup light brown sugar packed
¾ cup granulated sugar
¾ cup olive oil or vegetable oil
1 apple coarsely shredded
3 large eggs room temperature
2 teaspoons vanilla extract
Cinnamon Sugar Topping
3 tablespoons salted butter melted
¼ cup granulated sugar
1 teaspoon ground cinnamon
Instructions
1. Preheat the oven to 350°F. Grease and flour a 12-cup Bundt pan – I used PAM Baking spray but you could also grease and flour it.
2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
3. In a separate large bowl, whisk together the apple cider, apple sauce, brown sugar, white sugar, olive oil, eggs, and vanilla. Add, then stir in the shredded apple.
4. Then add the apple cider mixture to the flour mixture. Stir until just combined. (When you don’t see any more flour, stop – do not overmix). Pour the batter into the prepared pan.
5. Bake for 50 minutes. The top should bounce back when lightly pressed.
6. Allow the cake to cool in the pan for 20 minutes, then remove from the pan.
7. Mix together the ¼ cup sugar and 1 teaspoon ground cinnamon to create cinnamon sugar.
8. Brush the cake with melted butter and sprinkle on the cinnamon-sugar mixture. You may need to press the cinnamon-sugar onto the cake to help it stick on the sides.
Notes
1. How To Store: Store this Apple Cider Donut Cake covered at room temperature and enjoy it within 2 to 3 days.
2. Optional Apple Cider Glaze – If you want a thinner glaze you can add more apple cider. For a thicker glaze, you can just decrease the amount of apple cider used.

3. What Can I Use Instead Of Olive Oil? You can substitute olive oil for vegetable oil, canola oil, or even melted butter.
4. Can I Use White Sugar Instead Of Light Brown Sugar? It will slightly change the texture of the Apple Cider Donut Cake but you definitely can. It will still be incredibly delicious either way.
5. Could I Use Whole Wheat Flour In This Recipe? Yes, you can. I would recommend only substituting up to one cup of whole wheat flour and still using 2 cups of all-purpose flour. If the entire recipe used whole wheat flour the texture of the cake would be off.
6. Can I Make This Apple Cider Donut Cake Without Apples? You sure can! Just add an additional 1/3 cup of applesauce to the recipe. Bringing the total amount of applesauce up to one full cup.
7. What Can I Use Instead Of Apple Cider? If you’re in a pinch and don’t have any apple cider on hand you can use unsweetened apple juice.

Donut Batter
1 1/2 cups apple cider
2 cups all-purpose flour
1 1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground allspice
2 tsp baking powder
1/4 tsp salt
1/2 cup buttermilk
1 large egg
2 tbsp melted butter
1 tsp vanilla extract
1/2 cup granulated sugar
1/2 cup brown sugar
Spiced Sugar
1 cup granulated sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground allspice
6 tbsp melted butter
Preheat the oven to 350ºF. Grease a mini donut baking pan. Set it aside.
To make the donut batter, simmer the apple cider in a small pot until the liquid has reduced and only 1/2 cup remains, about 20 to 25 minutes.
While the cider is reducing, in a large bowl, whisk together the flour, cinnamon, nutmeg, allspice, baking powder, and salt. Set it aside.
In another large bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract. Whisk in the granulated sugar and brown sugar. Mix until smooth. Add half of the flour mixture to the wet ingredients and mix. Add the remaining flour mixture and mix. Whisk in the concentrated apple cider until the batter is smooth. Transfer the mixture to a piping bag. Pipe some of the batter into each donut mold, filling about halfway.
Bake the donuts until they are lightly golden and an inserted toothpick comes out clean, about 8 to 10 minutes.
While the donuts are in the oven, to make the spiced sugar, in a medium bowl, whisk together the sugar, cinnamon, nutmeg, and allspice.
Once the donuts are cool enough to handle, dip each donut into the melted butter and roll it in the spiced sugar.
Serve immediately or once cooled completely, store them in an airtight container for up to 3 days.
