2 md Baking apples; peeled, cored
; thinly sliced Nut mixture 7/8 c Pecans
2/3 c Sugar
Recipe by: The New Complete International Jewish CAKE MIXTURE 1/2 cup soft margarine
2/3 cup superfine sugar
3 eggs
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
2/3 cup dry apple cider or apple juice
Chop the nuts coarsely in the food processor, then put with the sugar in a small bowl. Put the apples in another. Grease a pan approximately 12 x 8 x 2 in. and preheat the oven to 375 degrees F. In an electric mixer, cream
the margarine and sugar until fluffy, beat in the eggs 1 at a time, then stir in the flour (sifted with the spices and raising agents) alternately with the liquid. Pour half the mixture into the prepared pan, arrange the sliced apples in an even layer on top and sprinkle with half the nut mixture. Smooth the remaining cake mixture on top and sprinkle with remaining nut mixture. Bake for 35 minutes, until spongy to the touch and a toothpick comes out clean from the center. Serve at room temp. cut into 24 fingers. -----

1/2 cup apple cider vinegar
12 tablespoons soft butter
1 and half cup sugar
1/4 tsp salt
3. eggs
1/4 tsp baking powder
FOR THE ICING:
3/4 cup icing sugar (powdered sugar)
3 to 4 tablespoons apple cider vinegar( depends on how much and how thick you desire it to be.
bake in a small loaf pan. GREASED.
preheated oven at 350 degrees
40 to 50 minutes.
ALLOW CAKE TO COOL DOWN AT LEAST 10 MINUTES BEFORE PLACING THE ICING ON

This deliciously moist 9X5-inch loaf size APPLE CIDER POUND CAKE never disappoints!! Yields 10-12 servings!! Easy to make. Recipe below...

APPLE CIDER POUND CAKE
Preheat oven to 350 degrees F.
Lightly grease and flour (1) 9X5-inch loaf pan. Set aside.
3/4 cup butter, softened
1-1/2 cups sugar
3 large eggs, at room temperature
1-1/2 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup apple cider
GLAZE:
3/4 cup confectioners' sugar
3-4 tablespoons apple cider
1. In a large bowl cream together butter and granulated sugar with an electric-mixer on medium-high speed until light and creamy. About 3 minutes.
2. Beat in eggs, one at a time, until well blended. About 20 seconds.
3. Add 1/3 cup of flour (plus all baking powder and salt) and 1/3 cup of apple cider beating after each addition for 20 second until all the flour and apple cider is well blended.
4. Spoon batter into prepared loaf pan. Run a skewer or butter knife though the batter to remove any air pockets. Tap batter on flat surface to remove any additional air bubbles.
5. Bake for 40 to 50 minutes or until a toothpick inserted into center come out clean.
6. Cool for 10 minutes on cooling rack.
7. Whisk together powdered sugar and apple cider until smooth. Pour over warm APPLE CIDER POUND CAKE. Cool for 1 hour before slicing.
TIPS: Store in airtight container up to 2 day or freeze up to 3 months.
