Bran Muffins
I have been a long-time fan of my local bulk food store. They carry so many interesting and unique things that you don't find at the supermarket. When I saw this big bag of wheat bran for less than $1.50, my mind started racing with ideas about how I could use it. As a fan of the good old bran muffin, this was the first on my list to create with my wheat bran treasure!
1 1/2 cup wheat bran
1 cup buttermilk or sour milk
1/3 cup vegetable oil
1 egg
2/3 cup brown sugar
1 tsp vanilla
1 cup flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 dried fruit (diced dates, raisins, diced apricots, dried cranberries - you could also use chopped walnuts or chocolate chips)
Preheat oven to 375 degrees.
Line standard muffin pan (one dozen) with liners or spray with non-stick spray.
In a large bowl, mix wheat bran and buttermilk/sour milk together. Let stand for 10 minutes.
In another bowl, beat together the oil, egg, brown sugar and vanilla. Add to the bran/buttermilk mixture and combine.
Sift or whisk together the flour, baking powder, baking soda and salt. Stir into the wet mixture until just blended. Fold in fruit.
Divide batter evenly between the 12 muffin cups.
Bake for 15-20 minutes or until tops spring back when gently pressed or a toothpick inserted into the middle of the muffins comes out clean.
Remove muffins from baking tin immediately and allow to cool on a wire rack.

Raisin Bran Muffins
375° 20 min
1 1/2 C All Bran Cereal
1 1/4 C Milk
1 1/4 C Flour
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
1/3 C Molasses
1 Egg
1/4 C Vegi Oil
1/2 C Raisins
Soak cereal and milk in your mixing bowl and set aside.
Mix, flour,baking powder, soda, salt & raisins.
Once cereal is softened, add egg, oil & molasses, mix well. Slowly add dry ingredients, mix until well combined, try
not to over stir.
Grease muffin tins and fill approx 3/4 the way up.
Bake approx 20 min.

MOIST Bran Muffins w/Raisins. THE BEST!!
I’ve tried to perfect muffins MANY TIMES to make them moist and not dry. Especially the next day, different recipes seem to dry out overnight. However! :-) These ones are a sure winner. I like that they don’t have white sugar in them also. I used raisin bran cereal this time, but you can use any brand cereal you like. Please follow along as I explain a little tips and tricks along the way. One of them is using cupcake papers and the difference between using theirs and not using those. Hi there and welcome to my channel. In this video, I'm showing you how to make a copycat of Mimi's Honey Bran Muffins. I loved the muffins Mimi's used to offer but they stopped selling them years ago. Well, can I just say that these are even better?? Give them a try and let me know if you agree.
Ingredients:
2 cups raisin bran cereal, processed in the food processor to make about 1 cup
½ cup milk
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup brown sugar (light or dark will work – I used light)
1/4 cup honey (Sorry! I said 1/2 cup in the vid!)
2 tablespoons molasses
1/4 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1 tablespoon grated orange zest
GLAZE:
3 tablespoons sugar
3 tablespoons brown sugar, packed
4 tablespoons butter, melted
2 tablespoons honey
1 teaspoon water
Makes 12 muffins*Bake 350 F for 15-20 minutes
