How To make Bran Raisin Muffins
1 1/2 c Shreds of wheat bran cereal
1/2 c Raisins
1/2 c Boiling water
1 Egg
1 c Buttermilk
1/4 c Vegetable oil
1 1/4 c All-purpose flour*
2/3 c Sugar
1 1/4 ts Baking soda
1/4 ts Salt
1/4 ts Ground nutmeg
Heat oven to 400F. Grease bottoms only of 12 medium muffn cups, 2 1/2 x 1 1/4 inches, or line with paper baking cups. Mix cereal, raisins and water;
let stand 2 minutes. Beat egg in 2 1/2-quart bowl; stir in buttermilk, oil and cereal mixture. Stir in remaining ingredients, all at once, just until flour is moistened (batter will be lumpy). Fill muffin cups about 3/4 full. Bake until golden brown, about 20 minutes. Immediately remove from pan. About 1 dozen muffins;190 calories per muffin. *If using self rising flour, omit baking soda and salt. Source: Betty Crocker's Cookbook, 6th Edition

Freshly baked muffins made with wheat bran and the goodness of raisins.
RAISIN BRAN MUFFINS
Ingredients
½ cup raisins
1½ cups wheat bran
1 cup refined flour
1 cup buttermilk
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 egg
⅓ cup oil
1 teaspoon vanilla essence
⅔ cup brown sugar
Method
1. Preheat oven at 190ºC.
2. Combine wheat bran and buttermilk in a bowl and mix well. Set aside for 5 minutes.
3. Combine flour, salt, baking powder and baking soda in another bowl and mix.
4. Take egg in a bowl and whisk. Add oil and mix. Add vanilla essence and mix well. Set aside.
5. Add brown sugar to flour mixture and mix. Add bran mixture and mix again. Add egg mixture and mix well. Add raisins and mix well.
6. Fill in silicon muffin moulds with prepared mixture and put them on a baking tray. Place the baking tray in preheated oven and bake for 20 minutes.
7. Demould and serve.
Preparation Time: 5-10 minutes
Cooking Time: 15-20 minutes

Six Week Raisin Bran Muffin Batter (recipe in description)
Flash Back Friday! My mom used to keep Raisin Bran Muffin Batter in a crock in the fridge for weeks. She'd warm up the oven in the morning, fill several muffin wells 2/3 full, bake at 400 for 20 minutes. Hot fresh bran muffins!
6 Week Raisin Bran Muffins
Oven - 400 F
18-20 minutes
Fill muffin tins 2/3 full
Dry Ingredients:
5 cups All-purpose flour
5 teaspoons Baking Soda
2 teaspoons salt
3 cups of Sugar
(Optional) 1-1/2 teaspoons Cinnamon
Put in Bowl and whisk together.
Add and mix 15 oz box Raisin Bran.
In another bowl whisk together:
1 Quart of Buttermilk
1 cup of Vegetable oil
4 Eggs
Mix wet ingredients with dry ingredients.
Put in Refrigerator and let sit overnight.
-Mixture lasts for 6 weeks
-can add any additional ingredients like nuts, orange peel, cranberries, etc.
MOIST Bran Muffins w/Raisins. THE BEST!!
I’ve tried to perfect muffins MANY TIMES to make them moist and not dry. Especially the next day, different recipes seem to dry out overnight. However! :-) These ones are a sure winner. I like that they don’t have white sugar in them also. I used raisin bran cereal this time, but you can use any brand cereal you like. Please follow along as I explain a little tips and tricks along the way. One of them is using cupcake papers and the difference between using theirs and not using those. Homemade Apple Raisin Bran Muffins
These are the BEST EVER bran muffins you ever did have! Try out this classic bran muffins with a twist ... apples. Maybe it's an underwhelming twist, but I promise you that apples make this easy raisin bran muffins recipe pop with a bit of excitement. They are AWESOME RAISIN BRAN MUFFINS that you too will enjoy! These muffins are a result of our Aldi grocery haul recently. Aldi...what a store!
Ingredients:
1/4 cup vegetable oil
1 cup Greek yogurt
1 teaspoon ground cinnamon
1 egg
3/4 teaspoons baking soda
1/2 teaspoon salt
1 cup flour
1 cup raisin bran
1/3 cup sugar
1 apple
Mix ingredients into a large bowl.
Chop apple into small pieces, and include with your muffin mix.
Spoon into an oiled muffin tin.
Bake for 30 minutes at 350°F.
Serve immediately afterwards.
