How To make Bran Raisin Muffins
1 1/2 c Shreds of wheat bran cereal
1/2 c Raisins
1/2 c Boiling water
1 Egg
1 c Buttermilk
1/4 c Vegetable oil
1 1/4 c All-purpose flour*
2/3 c Sugar
1 1/4 ts Baking soda
1/4 ts Salt
1/4 ts Ground nutmeg
Heat oven to 400F. Grease bottoms only of 12 medium muffn cups, 2 1/2 x 1 1/4 inches, or line with paper baking cups. Mix cereal, raisins and water;
let stand 2 minutes. Beat egg in 2 1/2-quart bowl; stir in buttermilk, oil and cereal mixture. Stir in remaining ingredients, all at once, just until flour is moistened (batter will be lumpy). Fill muffin cups about 3/4 full. Bake until golden brown, about 20 minutes. Immediately remove from pan. About 1 dozen muffins;190 calories per muffin. *If using self rising flour, omit baking soda and salt. Source: Betty Crocker's Cookbook, 6th Edition

Six Week Raisin Bran Muffin Batter (recipe in description)
Flash Back Friday! My mom used to keep Raisin Bran Muffin Batter in a crock in the fridge for weeks. She'd warm up the oven in the morning, fill several muffin wells 2/3 full, bake at 400 for 20 minutes. Hot fresh bran muffins!
6 Week Raisin Bran Muffins
Oven - 400 F
18-20 minutes
Fill muffin tins 2/3 full
Dry Ingredients:
5 cups All-purpose flour
5 teaspoons Baking Soda
2 teaspoons salt
3 cups of Sugar
(Optional) 1-1/2 teaspoons Cinnamon
Put in Bowl and whisk together.
Add and mix 15 oz box Raisin Bran.
In another bowl whisk together:
1 Quart of Buttermilk
1 cup of Vegetable oil
4 Eggs
Mix wet ingredients with dry ingredients.
Put in Refrigerator and let sit overnight.
-Mixture lasts for 6 weeks
-can add any additional ingredients like nuts, orange peel, cranberries, etc.

Honey Bran Muffins-Mimi's Cafe Copycat - but better! #brunch #breakfast #celebrate #Branmuffins
Hi there and welcome to my channel. In this video, I'm showing you how to make a copycat of Mimi's Honey Bran Muffins. I loved the muffins Mimi's used to offer but they stopped selling them years ago. Well, can I just say that these are even better?? Give them a try and let me know if you agree.
Ingredients:
2 cups raisin bran cereal, processed in the food processor to make about 1 cup
½ cup milk
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup brown sugar (light or dark will work – I used light)
1/4 cup honey (Sorry! I said 1/2 cup in the vid!)
2 tablespoons molasses
1/4 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1 tablespoon grated orange zest
GLAZE:
3 tablespoons sugar
3 tablespoons brown sugar, packed
4 tablespoons butter, melted
2 tablespoons honey
1 teaspoon water
Makes 12 muffins*Bake 350 F for 15-20 minutes

MOIST Bran Muffins w/Raisins. THE BEST!!
I’ve tried to perfect muffins MANY TIMES to make them moist and not dry. Especially the next day, different recipes seem to dry out overnight. However! :-) These ones are a sure winner. I like that they don’t have white sugar in them also. I used raisin bran cereal this time, but you can use any brand cereal you like. Please follow along as I explain a little tips and tricks along the way. One of them is using cupcake papers and the difference between using theirs and not using those.
