How To make Banana& Oat Bran Muffins
1 c All-purpose or unbleached

Preheat the oven to 400. Coat 12 standard muffin tin cups with nonstick spray(I use large paper muffin cups). In a medium bowl, combine the flour, oat bran, baking powder, baking soda, cinnamon, ginger and salt. Mix well. Add the egg white, buttermilk, sugar, banana, oil, honey and orange zest. Stir just until the dry ingredients are moistened; do not overmix. Didvide the batter evenly among the muffin cups. Bake on the center oven rack for 14 to 17 minutes, or until the tops are light brown. Loosen the muffins by rapping the pan sharply against the edge of the counter. Remove them immediately to a wire rack. Cool for 10 to 15 minutes before serving. Per muffin: 118 calories, 3.1 g. total fat (24% of calories),0.4 g. saturated fat, 1mg. cholesterol. MY VEGAN RECIPE EBOOK????
Ingredients:
2¾ Cups of Oat Flour
3 Medium-Large Ripe Bananas
3 Large Dates
1/4 cup Mixed Nuts/Seeds
1/4 cup Raisins/goji berries
1/2 cup chocolate chips (optional)
½ Cup Unsweetened Almond Milk
¼ Cup Ground Flax
2 Tbsp Lemon Juice
3 Tsp Cinnamon
1 Tsp Baking Soda
1 Tsp Baking Powder
Method:
Preheat oven to 325° (165 C)
1. Mix Dry Ingredients Together In A Large Bowl
(Oat Flour, Flax, Cinnamon, Baking Soda, Baking Powder)
2. Blend together, bananas, almond milk & dates
3. Add ALL ingredients into a large mixing bowl and stir together well.
4. Fill muffin tray (should make 12 muffins)
5. Bake at 325°F (or a bit hotter, depending on your oven) for 20-25 minutes.

INGREDIENTS
* 2 ½ cups (250 g) rolled oats (gluten free if you want)
* 2 large overripe bananas (1 cup mashed)
* 2 large eggs (2 flax eggs)
* 1/3 cup (120 g) honey (maple syrup etc.)
* 3/4 cup (195 g) oat milk (or any type of milk)
* 2 tsp vanilla extract
* 1 tbsp of lemon juice
* 2 tsp baking powder
* 1/2 tsp baking soda
* 1/2 tsp salt
* 1 tsp cinnamon
* 1/2 cup chopped walnuts
* 1/2 cup raisins
INSTRUCTIONS
1. Preheat oven to 350°F (175 C) to toast oats.
2. Place oats on a baking sheet and toast until lightly browned (about 6-8 minutes) , stirring once. Let cool to room temperature (the toasting adds flavor!)
3. Divide oats into portions of 1.5 cups, 1 cup.
4. Place 1.5 cups of oats in a food processor and blend/pulse until they reach a rough, flour like consistency.
5. Mash bananas well, they should have no lumps.
6. Add eggs, honey, milk and vanilla. Mix to combine.
8. Add dry ingredients (including the ground oats and 1 cup whole oats) to wet ingredients and mix until just incorporated.
9. Fold in raisins and nuts.
10. Allow these to sit for 10 minutes to soak the oats.
11. Scoop into muffin tin, well greased or lined with parchment muffin wrappers (makes 12 muffins). Overfill the baking cups, it will make them look taller.
13. Bake at 350°F (175 C) for 20 -25 minutes. (Tops should spring back when lightly pressed and/or a toothpick inserted in the center of a muffin should come out clean.)

BAKED BANANA OATMEAL CUP RECIPE
3 cups rolled oats
2 teaspoons baking powder
1 teaspoon cinnamon
1/8th teaspoon ground nutmeg
1/2 teaspoon kosher salt
1 cup mashed banana (2-3 bananas depending on their size)
2 pastured eggs
1.5 cups of unsweetened almond milk (or any milk you prefer)
2 tablespoons mini chocolate chips
Preheat oven to 350 degrees F.
Spray a 12-cup muffin tin with cooking spray or coat it with coconut oil or butter.
In a large bowl combine oats, baking powder, cinnamon, nutmeg, and salt.
In a separate bowl mix together mashed bananas, eggs, and milk until well combined.
Pour the milk mixture over the oat mixture and stir well to combine.
Evenly divide the oat mixture between all 12 muffin cups and then top each one with a sprinkle of chocolate chips.
Bake for 20-25 minutes or until set and cooked through. Allow to cool and then store in an airtight container in the fridge for up to a week.
Recipe Notes
*I like these muffins best warm or room temperature so if I am eating them from the fridge, I will either heat them in the microwave for 30-45 seconds or pop them in the toaster oven until warm.
*I rely on bananas to keep this recipe naturally sweet. If you like a sweeter flavor you can add a couple of tablespoons of brown sugar or coconut sugar along with the dry ingredients.
I top each muffin with chocolate chips because my kids demand them. Feel free to use other mix-ins like blueberries, walnuts, raisins, or raspberries. Stirring them into the batter is certainly an option if you want more flavor through the muffin cup.
