How To make Applesauce Bran Muffins (Lf)
1 1/2 c 100% bran cereal
1 c Skim milk
Egg
slightly beaten 1/2 c Unsweetened applesauce
2 1/2 tb Butter or margarine :
Melted 1 c All-purpose flour
2 1/2 ts Baking powder
1/4 c Brown sugar
Preheat oven to 400F. In a large bowl, combine cereal and milk. Set aside. In another bowl, combine egg, applesauce and melted butter. Stir into the cereal mixture. Add the dry ingredients, stirring until just blended. Spray a muffin tin with cooking spray or line with baking cups. Fill each cup 3/4 full. Bake at 400F for 15 minutes or until nicely browned on top. Makes 12 muffins. Per Muffin: 117 cals, 23mg chol, 4gm
dietary fiber, 2.5gm fat, 238 mg sodium

These delicious, low-fat muffins take just thirty minutes to assemble and bake. Plus, they don't use eggs or butter, which eliminates a great deal of unhealthful fat and all of the cholesterol.
MOIST Bran Muffins w/Raisins. THE BEST!!
I’ve tried to perfect muffins MANY TIMES to make them moist and not dry. Especially the next day, different recipes seem to dry out overnight. However! :-) These ones are a sure winner. I like that they don’t have white sugar in them also. I used raisin bran cereal this time, but you can use any brand cereal you like. Please follow along as I explain a little tips and tricks along the way. One of them is using cupcake papers and the difference between using theirs and not using those. Apple Bran Muffins
1 1/2 C All Bran Cereal
1 1/2 C Buttermilk
2 C Flour
2 tsp Baking Powder
1 tsp Baking Soda
1 tsp Ground Cinnamon
1/2 tsp Salt
1/2 C Brown Sugar
2 Eggs
1/3 C Molasses
1/4 C Oil
2 Medium sized Apples - peeled, cored & diced
In a large bowl mix the all bran cereal and buttermilk. Let stand for 10 minutes
In a medium sized bowl whisk flour, baking powder, baking soda, cinnamon & salt. Set aside
Make a well in the cereal mixture and add your eggs, brown sugar, molasses & oil. Stir until
well combined. Gradually add your flour mixture trying not to over mix. Gently fold in apples.
Spoon into lined muffin tin almost to the top.
Bake @ 375 F for 18-20 minutes.
This batter made me 18 muffins.

BAKED APPLE OATMEAL CUPS RECIPE
3 cups old-fashioned rolled oats
1 teaspoon baking powder
1/2 teaspoon cinnamon
1 cup organic buttermilk (you can sub any milk you prefer)
2 eggs, beaten
1/2 cup applesauce (I used cinnamon applesauce)
1 large apple, chopped (1 heaping cup)
1/4 cup raisins
Preheat oven to 350ºF. Spray a 12-count muffin pan with non-stick cooking spray or coat with coconut oil and set aside.
In a large bowl combine oats, baking powder, cinnamon, buttermilk, eggs, and applesauce. Mix together until everything is well incorporated.
Add in chopped apple and raisins and gently toss until they are evenly distributed throughout the batter.
Divide batter amongst all 12 muffin cups and pop in the oven for 25-30 minutes or until they have set through and are golden brown on top.
Cool and enjoy.
*I like to store these in an airtight container and keep them in the fridge. They will last a good week stored this way.
