How To make Raisin Bran Muffins
1 15-ox box raisin bran
5 c All-purpose flour
1 1/2 c Sugar
1 1/2 c Brown sugar
5 ts Baking soda
1 tb Pumpkin spice
2 ts Salt
4 Eggs -- beaten
1 c Melted shortening or
-margarine or 1 c Vegetable oil
2 ts Vanilla
1 qt Buttermilk
Mix al ingredients thoroughly. Store in refrigerator in tightly sealed jar. Bake as needed in lightly greased muffin pan for 20- 30 minutes at 425 degrees. Nutritional info per serving: 88 cal; 2g pro, 15g carb, 3g fat (26%) Exchanges: 1 bread, .5 fat formatted 3/24/96 by Lisa Crawford

I’ve tried to perfect muffins MANY TIMES to make them moist and not dry. Especially the next day, different recipes seem to dry out overnight. However! :-) These ones are a sure winner. I like that they don’t have white sugar in them also. I used raisin bran cereal this time, but you can use any brand cereal you like. Please follow along as I explain a little tips and tricks along the way. One of them is using cupcake papers and the difference between using theirs and not using those. Freshly baked muffins made with wheat bran and the goodness of raisins.
RAISIN BRAN MUFFINS
Ingredients
½ cup raisins
1½ cups wheat bran
1 cup refined flour
1 cup buttermilk
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 egg
⅓ cup oil
1 teaspoon vanilla essence
⅔ cup brown sugar
Method
1. Preheat oven at 190ºC.
2. Combine wheat bran and buttermilk in a bowl and mix well. Set aside for 5 minutes.
3. Combine flour, salt, baking powder and baking soda in another bowl and mix.
4. Take egg in a bowl and whisk. Add oil and mix. Add vanilla essence and mix well. Set aside.
5. Add brown sugar to flour mixture and mix. Add bran mixture and mix again. Add egg mixture and mix well. Add raisins and mix well.
6. Fill in silicon muffin moulds with prepared mixture and put them on a baking tray. Place the baking tray in preheated oven and bake for 20 minutes.
7. Demould and serve.
Preparation Time: 5-10 minutes
Cooking Time: 15-20 minutes

In this episode, I make some of the most delicious raisin bran muffins that you have ever eaten. This recipe was made from a recipe card handwritten by my grandmother, probably copied off of a Kellogg's Raisin Bran box sold in 1979.

Six Week Raisin Bran Muffin Batter (recipe in description)
Flash Back Friday! My mom used to keep Raisin Bran Muffin Batter in a crock in the fridge for weeks. She'd warm up the oven in the morning, fill several muffin wells 2/3 full, bake at 400 for 20 minutes. Hot fresh bran muffins!
6 Week Raisin Bran Muffins
Oven - 400 F
18-20 minutes
Fill muffin tins 2/3 full
Dry Ingredients:
5 cups All-purpose flour
5 teaspoons Baking Soda
2 teaspoons salt
3 cups of Sugar
(Optional) 1-1/2 teaspoons Cinnamon
Put in Bowl and whisk together.
Add and mix 15 oz box Raisin Bran.
In another bowl whisk together:
1 Quart of Buttermilk
1 cup of Vegetable oil
4 Eggs
Mix wet ingredients with dry ingredients.
Put in Refrigerator and let sit overnight.
-Mixture lasts for 6 weeks
-can add any additional ingredients like nuts, orange peel, cranberries, etc.
