How To make Barbecued Pork Strips
2 lb Boneless pork butt
MARINADE:
2 tb Light soy sauce
2 tb Chinese rice wine
-or dry sherry 2 tb Sugar
1 tb Minced garlic
1 tb Brown bean sauce
1 tb Hoisin sauce
1 tb Red bean curd
1 ts 5-spice powder
BASTING LIQUID:
3 tb Malt sugar or honey
3 tb Boiling water
CUT THE PIECE OF PORK BUTT in half. Cut the two halves into 3/4-inch strips. Put the strips in a bowl with the marinade and mix well to coat them thoroughly. Marinate at room temperature for 3 hours, or overnight in the refrigerator. Remove the pork from the marinade and baste the strips with the malt-sugar mixture. Use curved skewers (available in Chinese cookware shops and some restaurant- supply stores) to hang the meat from the top shelf of the oven over a large pan filled with water to a depth of 1/4 inch. Roast the pork at 350F for 45 minutes, basting occasionally with
the malt sugar or honey. Increase the heat to 425F and roast for 20 minutes to finish the pork. When the pork is cool enough to handle, cut it into 1/2-inch slices. Arrange the pork slices on a platter. Serves 4 to 6 as a
main course accompanied by vegetables, 8 to 10 as an appetizer.

Samgyeopsal Gui / Grilled Pork Belly
Ingredients
Pork belly---------------------------------------------------------------------------- 400g
Vegetable oil----------------------------------------------------------------------- 1 tsp
Sesame oil-------------------------------------------------------------------------- 1 tsp
Toasted sesame seeds------------------------------------------------------- 1 tsp
Garlic----------------------------------------------------------------------------------- 5 cloves
Kimchi---------------------------------------------------------------------------------- 200g
Salt--------------------------------------------------------------------------------------- 1 tsp
Black pepper------------------------------------------------------------------------ 1/2 tsp
Instructions
1. Heat the pan over medium heat. Add oil and cook from the fat part until brown and crispy
2. Cook both sides of the meat by turning the meat upside down. Drain excess oil from the pan
3. Add garlic and continue cooking the meat until they’re fully cooked. Take the meat out from the pan and rest
4. In a meantime put kimchi in the same pan that was used to cooked the meat and stir fry 5 to 10 minutes until cooked. Drizzle 1 teaspoon of sesame seeds. Sprinkle sesame seeds on kimchi
5. Slice pork belly and serve warm with cooked kimchi in a platter

How to cook pork belly strips using the Weber MASTER-TOUCH
Hi there, my name is Paul and I’m an enthusiastic home chef. I’ve started this channel to have fun using my new Weber BBQ. I’ll be sharing my progress and the meals I cook in the future.
In this video I cook 4 good sized pork belly strips. I’ll be using the Weber grill with one of the baskets filled with hot coals and then covered a couple of times with whiskey wood chips from Weber which had been soaked.
The rub used was Porky from angusandoink.com I’ve found this rub to work in so many different recipes from chilli’s for tea to baked eggs for breakfast. The meat marinated in this for roughly 3hrs in the fridge. I removed the meat from the fridge 30mins before cooking.
The pork belly was around an inch and a quarter thick and the total cooking time was around 1hr 25mins. In this time I rotated and flipped the meat every 15-20 mins.
In the grill I used one of the baskets filled with hot coals, then next to this I sat a drip tray filled with boiling water. This I feel helps keep moisture in the meat(though that’s not too much of an issue with pork belly due to the fat content). It also helps keep the BBQ temperature even.
The igrill2 was used with one probe mounted with my homemade mount. (they didn’t have the proper one in stock, so I made do with a plasterboard fixing). Seems to work so far. This is connected to the igrill app. I’ve found this very useful so far, and it’s nice for the reassurance everything’s cooked. Also on a longer cook it’s nice to see the temperatures staying in the ranges you’re after.
The pork belly was accompanied with a spiced rice dish and salad.
