Carrot Date Breakfast Muffins | Organixx Recipe
These Carrot Date Muffins are a yummy way to sneak some veggies into breakfast or snack time. The scoops of Clean Sourced Collagens powder provide extra protein and support healthy hair, skin, nails, and more.

The flour used in these date carrot muffins is buckwheat flour and tapioca flour.

This recipe is Mini Date Muffin, as the title suggests, this recipe uses dates as the main ingredient and is mini in size, because it is shaped using a mini steamed sponge mold.
Ingredients:
- 50 grams of chopped dates
- 1/2 cup hot water
- 50 grams of palm sugar
- 1 egg
- 125 grams of all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp cinnamon powder
- 30 grams of chopped peanuts
- 3 tbsp vegetable oil
- enough caramel paste

1910 Entire Wheat Muffins With Dates Recipe - Old Cookbook Show - Glen And Friends Cooking
Today we once again reach back into our collection of old cookbooks and do an old cookbook recipe from 1910. This entire wheat muffin recipe, is what today we'd call a whole wheat muffin recipe.
Ingredients:
2 cups Franklin Entire Wheat Flour
3 teaspoons of baking powder
1 teaspoon of salt
1 cup milk
2 eggs
3 tablespoons of melted butter
¾ cup of dates stoned and cut in small pieces
Method:
Sift together the flour, baking powder and salt; add the milk gradually, then the egg-yolks beaten light, and the melted butter.
Mix in the dates, then add the egg-whites beaten stiff.
Beat well and bake (350ºF) for twenty-five minutes in buttered gem pans.

PRINT RECIPE for Apple Oatmeal Muffins:

RECIPE: Apple Oatmeal Muffins
INGREDIENTS:
1 medium apple, chopped or shredded
1½ cups rolled oats
¼ cup vegetable oil
1 - 2 eggs (optional)
½ teaspoon Kosher salt
½ cup raisins, chopped dates, or dried cranberries
⅓ cup nuts, chopped
½ - 1 teaspoon cinnamon
Cooking spray
INSTRUCTIONS:
1: Preheat oven to 375°.
2: Spray muffin pans with cooking spray.
3: Wash the apples. Quarter and cut out the core.
4: Chop apples on low speed in the blender or by hand.
5: Combine ingredients in a bowl. Let stand for a few minutes so the mixture can absorb the moisture.
6: Mix mixture together firmly with fingers or a fork.
7: Spoon mixture into muffin pans. Fill and round nicely.
8: Bake for 25 minutes or until muffins start to brown.
NOTES:
The eggs help the ingredients stick together. You can leave the eggs out and these muffins will still be delicious!
If the raisins are extra dry, soak them in cold water for at least 10 minutes. Then drain the water and add them to the recipe as instructed.
You can add more or less nuts and dried fruit as desired.
If you don’t have cooking spray you can wipe the muffin tin with vegetable oil.
Use rolled or old fashioned oats. Do not use quick oats.
