How To make Title: Apple Crunch Muffins
Servings: 12
1 1/2 c unbleached flour
1/2 c sugar
2 t baking powder
1/2 t salt
1 1/2 t ground cinnamon
1/4 c vegetable shortening
1 large egg
1/2 c milk
1 c apple
Nut Crunch Topping:
* Apples are to be washed and cored. Shred the unpeeled apples for recipe. ~----------------------------------------------------------------- Sift together flour, sugar, baking powder, salt and cinnamon into mixing bowl. Cut in shortening with pastry blender until fine crumbs form. Combine egg and milk. Add to dry ingredients all at once, stirring just enough to moisten. Stir in apples. Spoon batter into paper-lined 2 1/2-inch muffin-pan cups, filling 2/3rds full. Sprinkle with nut crunch topping. Bake in 375 degree oven 25 minutes or until golden brown. Serve hot with butter and homemade jelly or jam.
NUT CRUNCH TOPPING: Mix together 1/4 c brown sugar (packed), 1/4 c chopped pecans and 1/2 t ground cinnamon in small bowl.

FOR THE FRITTERS
¼ cup + 2 tablespoons [53 g] all purpose gluten free flour I used Better Batter (See Recipe Notes)
2 tablespoons [18 g] cornstarch
¼ cup 50 granulated sugar
1 teaspoon baking powder
¼ teaspoon kosher salt
7 tablespoons buttermilk
Neutral oil for frying (I like a combination of equal parts grapeseed oil and Spectrum nonhydrogenated vegetable shortening)
1 egg 50 g, weighed out of shell, at room temperature
1 large firm apple, peeled, cored and diced (see Recipe Notes)
FOR THE GLAZE
1 cup [115 g] confectioners’ sugar
½ teaspoon ground cinnamon
1 tablespoon lukewarm water plus more as necessary

4 Honeycrisp apples, cored and chopped
1/4 cup orange juice
3/4 cup pecan halves
3/4 cup hazelnuts
3/4 cup raisins
3/4 teaspoon ground ginger
3/4 teaspoon ground cinnamon
Method:
Put apples in an 8-inch square baking dish or 2-quart casserole dish. Drizzle with orange juice, toss until the fruit is coated and smooth the top. In a food processor, combine pecans, hazelnuts, raisins, ginger and cinnamon and pulse just until chopped. Spoon the nut mixture over the apple mixture and serve.

Per Serving: 220 calories (130 from fat), 14g total fat, 1g saturated fat, 25g carbohydrates, (4 g dietary fiber, 17g sugar), 3g protein.
