How To make Apple Crunch Muffins 1
1 1/2 c Unbleached Flour, Sifted
1/2 c Sugar
2 ts Baking Powder
1/2 ts Salt
1 1/2 ts Ground Cinnamon
1/4 c Vegetable Shortening
1 ea Large Egg, Slightly Beaten
1/2 c Milk
1 c Tart Apples *
1 x Nut Crunch Topping
* Apples are to be washed and cored. Shred the unpeeled apples for recipe. ~------------------------------------------------------------------------- Sift together flour, sugar, baking powder, salt and cinnamon into mixing bowl. Cut in shortening with pastry blender until fine crumbs form. Combine egg and milk. Add to dry ingredinets all at once, stirring just enough to moisten. Stir in apples. Spoon batter into paper-lined 2 1/2-inch muffin-pan cups, filling 2/3rds full. Sprinkle with nut crunch
topping. Bake in 375 degree oven 25 minutes or until golden brown. Serve hot with butter and homemade jelly or jam. NUT CRUNCH TOPPING: Mix together 1/4 c brown sugar (packed), 1/4 c chopped pecans and 1/2 t ground cinnamon in small bowl.

These muffins are excellent to grab and go for breakfast, the oats and apples will keep you satisfied all morning.
Ingredients (makes 14 regular sized muffins):
For muffins:
1 1/3 cups (180g) All Purpose flour
2/3 cup (60g) Oat flour
1/2 cup (90g) Light Brown Sugar - packed
2 tsps Baking powder
1/4 tsp Salt
1/2 tsp Cinnamon - ground
2 large Eggs - at room temperature
1 cup (250ml) Whole Milk
1/2 cup (125ml) Canola/Vegetable oil
2 cups (250g) Apples - peeled and chopped (use tart baking apples like Granny Smith to prevent it from getting too mushy after baking)
Filling:
1 cup (226g) Cream Cheese - softened at room temperature
1/4 cup (50g) White granulated sugar
Crumb topping:
1/4 cup (35g) All purpose flour
1/3 cup (35g) Rolled oats
1/4 cup (40g) Light brown sugar
1/8 tsp Cinnamon - ground
3 tbsps Unsalted butter - cold and cubed in to small chunks
1/3 cup (40g) Walnuts - finely chopped

This apple crisp has browned butter in the crisp topping, giving it a beautiful nutty aroma that complements the apples perfectly.
Yield: 6-8 servings
Prep Time: 20 minutes
Cook time: 45 minutes
Ingredients
6 cups (900 g) apples (such as Gala, MacIntosh or other sweet, eating apple), peeled and sliced
¼ cup (60 mL) maple syrup
1 tsp (5 mL) vanilla extract
½ cup (115 g) unsalted butter
1 ¼ cups (115 g) regular rolled oats
1/3 cup (50 g) whole wheat flour
½ cup (100 g) packed light brown sugar
1 tsp (5 mL) ground cinnamon
pinch salt
Directions
1. Preheat the oven to 350 F (180 C).
2. Place the sliced apples in a 6-cup (1.5L) by volume baking dish (any shape). Stir in the maple syrup and vanilla to coat the apples.
3. Melt the butter in a small saucepot over medium high heat until it browns and takes on a nutty aroma (once the foam subsides, it should be done). Set aside.
4. Stir the oats, flour, brown sugar, cinnamon and salt in a mixing bowl. Add the browned butter and stir until blended. Spread this evenly over the apples and bake for about 45 minutes, until the apples yield easily when a paring knife is inserted in the centre of the crisp (the crisp should be bubbling at the edges.) Allow the crisp to cool for 15 minutes before serving.
