Today I made apple crumble muffins, which making festive house smell.
It has been almost a month since I uploaded the baking video.
I only added ground cinnamon for spice, but it will be also great with adding apple pie spices :)
This recipe has so much apples in it. But after bakes, there are no crunch texture, so you won't know this recipe is with apples unless you already know.
Fyi, not crunch is not meaning it’s squishy????

????Ingredients(12 muffins)
+Apple Muffin
240g(2cups) all-purpose flour
4g(1tsp) baking powder
3g(1/2tsp) baking soda
4g(1/2tsp) salt
4g(1tsp) ground cinnamon
113g(1/2 cup) unsalted butter
67g(1/3 cup) white sugar
110g(1/2 cup) brown sugar
2 eggs
5g(1tsp) vanilla extract
220g(1cup, 7.7oz) chopped apples
240g(1cup, 8oz) shredded apples
+Crumble
75g(1/3cup) brown sugar
15g(1Tbsp) all-purpose flour
pinch of ground cinnamon
15g(1Tbsp) unsalted butter
1. Preheat oven to 375F / 190C.
2. Mix white sugar and chopped apples.
3. In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in chopped apples mixture and shredded apples. Mix with sifted flour, baking powder, ground cinnamon, baking soda and salt.
5. In a small bowl, mix unsalted butter, brown sugar, flour and cinnamon. Rub until mixture is like coarse crumbs or wet sand.
6. Scoop the mixture into the prepared muffin pan and sprinkle over tops of mixture in muffin pan.
6. Bake 20~25 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

These apple crumble muffins are soft and fluffy, stuffed with small chunks of fresh apples and topped with rich crumble topping.

Makes 12 muffins
Ingredients:
For the muffins:
2 Apples
1 Egg, large
1/2 cup (120ml) Milk
1/3 cup (80ml) vegetable oil
1¼ cups (160g) Flour
2 teaspoons Baking powder
1/4 teaspoon Salt
3/4 cup (150g) Sugar
1 teaspoon Vanilla extract
For the crumble:
1/4 cup (60g) Butter, cold
1/2 cup (65g) Flour
1/2 cup (100g) brown Sugar
1 teaspoon Cinnamon
Directions:
1. Preheat oven to 350F (175C). Line a 12-cup muffin pan with muffins liners, spray the cups with oil (optional) and set aside.
2. Make the muffins: In a bowl mix milk, oil, egg and vanilla extract. Set aside.
3. In a separate bowl, combine flour, baking powder, sugar and salt.
4. Peel the apples and cut into small chunks. Place apple chunks into the flour mixture and toss well to ensure the apples are well coated.
5. Pour the wet mixture into the dry mixture and mix until combined.
6. Scoop the batter into muffin cups until 3/4 full.
7. Make the crumble: Combine the ingredients for the crumble topping together in a small bowl and crumble together using your finger tips.
8. Sprinkle some crumble on top of each muffin batter. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean.
9. Let cool before serving.

Apple Crunch Muffins
Each recipe makes about 24 muffins
INGREDIENTS
Muffin
• 3 cups flour
• ½ cup sugar
• 6 tsp baking powder
• ½ tsp salt
• 1 tsp cinnamon
• 2 eggs
• 1 ½ cup water (or milk if preferred)
• 1/3 cup melted margarine (or butter)
• Oil (to grease the baking pans)
• 1-2 cups applesauce
Crumble topping
• 2/3 cup brown sugar
• 1/3 cup flour
INSTRUCTIONS
• Preheat oven to 400°F
• Grease the muffin trays
• Make crunchy topping – Add brown sugar and flour together and cut in the margarine until in resembles breadcrumbs. Set aside.
• In a large mixing bowl sift together flour, sugar, baking powder, salt and cinnamon.
• In a medium bowl beat together eggs, water and melted margarine
• Add the egg mixture to the flour mixture and whisk until just combined (don’t overmix!)
• Add batter to the muffin tins. Fill each 1/2 full.
• Add 1 Tbsp applesauce
• Add 1 Tbsp of batter on top, then sprinkle with crunchy crumble topping
• Put in preheated oven for 18-20 minutes until golden brown
• Remove from oven and let tray cool for a few minutes before transferring muffins to a wire cooling rack.
• Enjoy!
