How To make Spicy Bean Patties
6 oz Canned white kidney beans
1 c Cooked brown rice
1 c Egg Beaters 99% Real Egg
Product 3 tb Plain dried bread crumbs
1/4 ts Mexican seasoning
1 ds Ground red pepper
1 ds Salt
1/4 c Diced red bell peppers
1/4 c Chopped scallions
1 tb Finely chopped green chili
Peppers 1 Clove garlic, minced
Preheat oven to 400. Using a fork in medium mixing bowl mash beans; add rice, egg substitute, bread crumbs, Mexican seasoning, ground red pepper, and salt and stir thoroughly to combine, set aside. Spray small nonstick skillet with nonstick cooking spray and heal; add bell pepper, scallions, chili pepper and garlic and cook over medium heat, stirring frequently until softened about 1 min. Add to bean mixture and stir to combine. Shape bean mixture into 4 equal patties. Spray nonstick baking sheet with nonstick cooking spray and arrange patties on baking sheet. If desired brush each patty with 1/4 t oil (this will add about 4gms fat per serving) and bake for 15 min. Carefully turn each patty over and brush with 1/4 t of oil and bake 5 min longer. These can also be heated in a nonstick skillet sprayed with nonstick cooking spray. Be careful not to overcook. Black Bean Burgers
Here is what you will need!
RECIPE:
Yields 4 patties
Ingredients:
2 cans black beans, rinsed and drained
1 onion, minced
3 garlic cloves, minced
2 carrots, shredded
1/2 cup quick oats
1 Tbsp. soy sauce
1 Tbsp. olive oil
1 tsp cumin1/2 tsp coriander1/2 tsp chili powder1/4 tsp cayenne pepper
Salt and pepper to taste
Instructions:
Heat one tablespoon of olive oil in a pan. Combine onions, garlic, salt, and pepper and cook until onions are translucent. Add carrots, cumin, coriander, chili powder, and cayenne pepper until carrots are tender. Remove pan from heat.
In a bowl, mash the beans and then add the contents of the pan along with the soy sauce and quick oats. Mix and form four patties. Place in freezer for 30 minutes to set. Cook patties on a pan coated in cooking spray over medium heat, flipping halfway. Use patties to create your dream veggie burger.

INGREDIENTS
50 grams carrot half medium
50 grams celery 1 small stalk
100 grams onion 1 medium
1 clove garlic
1½ teaspoons salt
2 cups quick cooking oats
½ cup whole wheat flour
1 teaspoon Italian herbs dry
½ teaspoon black pepper
1 - 19 fl. oz. can black beans drained but not rinsed
1 teaspoon soy sauce
INSTRUCTIONS
Using a food processor or a box grater, pulse or shred the carrot, celery, onion and garlic. Add the salt and stir together well, mashing the mixture so the salt can draw out liquid from the vegetables. Set aside.
In a large bowl combine oats, whole wheat flour, Italian herbs and black pepper. Mix until well combined. Add beans, vegetable mixture and soy sauce. Mash the beans with a fork before mixing everything together. Do not mash the beans too much. The mixture will be stiff, so feel free to add a spoonful or 2 of water. Do not add too much though or the burgers will be mushy.
Cover mixture and refrigerate for 4 hours or overnight. If you are in a hurry, at least 1 hour is necessary.
When you are ready to cook the burgers, shape the mixture into 6 patties. Heat 1/4 inch oil in a skillet on medium high and sear the burgers on each side for 45 seconds to 1 minute. When both sides are golden brown, reduce the heat to the lowest temperature and cover with a lid.
Cook low and slow for 15 minutes on each side, checking frequently to prevent burning. By the end of cooking, the burgers should be slightly darker than when they were seared and cooked thoroughly. Serve on buns with your favorite condiments.
