How To make Spicy Bean Goulash
1 c Red kidney beans, soaked
-overnight 1 tb Olive oil
1 md Onion, finely chopped
1 Garlic clove, finely chopped
1 sm Red chile, finely chopped
3 lg Red peppers, chopped
3 c Chopped mushrooms
1 md Potato, diced
3 ts Paprika
1 ts Thyme
2 tb Tomato paste
1 ts Miso (soy paste), dissolved
-in a little water Salt Black pepper Brown rice or whole-wheat -noodles This simple goulash recipe is from "Vegetarian Cooking," an RD Home Handbook Publication. Drain the beans, cover with plenty of fresh water, bring to a boil, uncovered and boil fast for 10 minutes. Reduce heat, cover, and simmer for 40 minutes or until soft. Drain, reserving liquid.
Heat the oil in a large saucepan and gently fry the onion in the oil for 4 to 5 minutes or until soft. Add the garlic, chile, peppers and mushrooms and cook for five minutes. Cover and cook the mixture for 15-20 minutes over a very gentle heat. Add the cooked beans, potato, paprika, thyme, tomato puree and miso to the stew. Simmer gently for 30 minutes, adding a little bean liquid if necessary. Season with salt and pepper and serve hot with rice or noodles. Serves four. Nutritional analysis per serving: 289 calories, 4.6 grams fat, 0 milligrams cholesterol, 111 milligrams sodium; 14 percent of calories from fat.

Traditional Hungarian Bean Goulash Soup - Babgulyás

Ingredients:
-3tbs smoked bacon fat (or any oil)
-1 whole onion, finely diced
-775 g beef chuck, cubed
-1 string Hungarian smoked sausage, sliced
-1 diced tomatoe
-2-3 Hungarian wax peppers ( or Anaheim peppers), diced
-4 smaller carrots, sliced
3-4 parsley root, sliced
celery root and the leaves
-2 cans of white beans (or any cooked beans)
-2-3 bay leaves
-2 & 1/2 tsp Hungarian paprika (powder)
Instructions:
Saute the onions in the bacon fat ( szalonna zsirba) a few minutes than add the garlic. Add the ground paprika and the beef chunks to the pot and start browning the meat.
Than add bay leaves, diced tomatoes, diced peppers, add enough water to cover meat and vegetables. Cook on medium heat until the meat are tender, about an hour.
Add the rest of the ingredients: the vegetables, beans and the sliced smoked sausage. (you can also add diced potatoes for extra thickness and richness) Continue to cook the soup until vegetables are tender, add salt ,pepper, and adjust seasoning to your taste. Take out the bay leaves and celery leaves from the soup.

A completely plantbased Hungarian Bean Goulash with coconut milk.
Ingredients
1 litre 100% coconut milk
1 kg beans (precooked) of your choice you may also mix them like I did in this video
1 large onion diced
2 large tomatoes diced
2 paprik or bell peppers diced
4 cloves of garlic diced
2 stalks of leek diced
2 ribs of celery diced
2 tablespoons of coconut oil
2 tablespoons of rich tomato paste
1 teaspoon of hungarian paprika paste
two hot spanish peppers diced
Method
Add the coconut oil to the hot pot and let melted then add all the vegetables and let them saute until soften.
then add tomato paste and let sautee for 5 minutes before you add the beans and then the coconut milk, salt and hungarian paprika paste and let cooked for 30 to 45minutes until the beans are further tender.
