How To make Spiced Pumpkin Bread In a Jar
2/3 c. shortening
2 2/3 c. sugar
4 eggs
2 c. canned pumpkin
2/3 c. water
3 1/3 c. flour
1/2 tsp. baking powder
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. ground cloves
1 1/2 tsp. salt
2/3 c. nuts
Cream shortening and sugar; beat in eggs, pumpkin and water. Sift together flour, baking powder, baking soda, salt and spices. Add to pumpkin mixture. Stir in nuts. Pour mixture into greased wide mouth pint jars, filling 1/2 full. Bake at 325 degrees for 45 minutes. When done, remove jars one at a time; wipe sealing edge with paper towel and screw cap on tightly. The heat will vacuum seal the jar and the bread will keep up to 1 year. Makes 8 pints.

INGREDIENTS
For the bread:
- 3 1/3 cups flour
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1/2 tsp freshly ground nutmeg (or ½ tsp pre-ground)
- 1 tsp ground ginger
- 2 cups sugar
- 1 cup neutral oil
- 4 large eggs
- 1 15-oz can pumpkin pureé
- 1 tsp vanilla extract
For the maple glaze:
- 1/2 cup powdered sugar sifted
- 1 tbsp milk
- 1 tsp maple extract
-1/2 tsp cinnamon
INSTRUCTIONS
Preheat oven to 350°F.
In a bowl, combine the eggs, pumpkin, oil, sugar, and vanilla. Whisk to combine. Add the flour, baking soda, cinnamon, nutmeg, ground ginger, and salt. Whisk to combine.
Pour batter into two greased 8 1/2 x 4 1/2 loaf pans. Run a greased knife down the center of the loaves to encourage a crack once bake. Bake in preheated oven until browned around the edges and a skewer inserted in the middle comes out clean, 50-60 minutes. Remove from oven and cool in pans for 10 minutes.
While still slightly warm, prepare the glaze by combining the powdered sugar, milk, cinnamon, and maple extract. Whisk until smooth and drizzle over warm loaves. Cool on racks for an additional 15 minutes. Then slice and serve.
