BETH'S EASY PUMPKIN BREAD RECIPE
Makes 2 9x5 loaves
PRINT RECIPE HERE:
Ingredients:
3 ½ cups (420 g) of flour
1 ½ cups (300 g) of sugar
1 ½ tsp (7.5 ml) salt
2 teaspoons (10 ml) baking soda
3 tsp (45 g) of pumpkin pie spice (or 2 tsp cinnamon, 3/4 tsp nutmeg, 1/8 tsp cloves, 1/8 tsp ground ginger))
1 15-oz can (424 g) of pure pumpkin puree (about 1 3/4 cup)
5 eggs
1 cup (240 ml) of canola oil
1/2 cup (120 ml) of water
Optional
1 cup (240 ml) of raisins
1 cup (240 ml) of walnuts
1 cup (240 ml) of Pepitas (Toasted Pumpkin Seeds)
Method:
Preheat oven to 350F (176C) degrees.
Grease two 9 x 5 (23 cm x 13 cm) loaf pans.
Mix dry ingredients. Mix wet ingredients. Combine the dry into the wet, 1/3 at a time, being careful not to over mix! (Or you will have tough bread!)
Add raisins.
Pour batter into two loaf pans. Top one with walnuts and top the other with Pepitas.
Bake until a toothpick comes out clean, about 40-50 mins.

3 Large Eggs, beaten
1 Cup Canned Pumpkin (240 g.)
1 teaspoon Pumpkin Spice
1 teaspoon Vanilla Extract
2 Cups All Purpose Flour (260-280 g.)
3 teaspoons Baking Powder
1 teaspoon Baking Soda
½ teaspoon salt
1 Cup sugar
½ Cup melted butter (1 stick)

????Ingredients List for your convenience:
Dry Ingredients:
1-1/2 cups all purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt or a pinch
1 tbsp. pumpkin pie spice (make your own by combining cinnamon, all-spice, cloves, nutmeg, and ginger)
Wet Ingredients:
1/2 cup olive oil - coconut oil, or canola oil work well too
1 cup granulated sugar - you can use 1/2 cup light brown, and 1/2 cup regular sugar
1 tsp. vanilla extract
(1) 15 oz. can of pumpkin puree (you can make your own at home using fresh pumpkin too)
3 eggs at room temperature
Homemade Pumpkin Pie Spice
3 tbsp ground cinnamon
2 tsp ground ginger
2 tsp ground nutmeg
1 tsp ground allspice
1 tsp ground cloves
Mix them all up and you have your own pumpkin pie spice

Healthy Pumpkin Bread!
This amazing pumpkin bread is naturally sweetened with honey or maple syrup, and made with whole wheat flour. It’s so moist and fluffy, no one will ever guess! FULL RECIPE:
Vegan Date Sweetened Pumpkin Bread
Vegan Date Sweetened Pumpkin Bread:
Ingredients:
• 3 cups rolled oats
• 1 heaping teaspoon cinnamon
• 1 teaspoon pumpkin pie spice
• 2 teaspoons baking powder
• A dash of salt
• ½ cup Almond milk
• 1 15 oz. can of pumpkin puree
• 1 teaspoon vanilla extract
• ¼ cup melted coconut oil
• 10 medjool dates
• 1 flax egg (1 tbsp. ground flaxseeds with 3 tbsp. water)
• Optional: Chocolate chunks/ chips, raisins, nuts
Instructions:
1. Preheat oven to 400 degrees Fahrenheit
2. Make the flax egg by combining 1 tbsp. ground flaxseeds with 1 tbsp. water. Let sit while mixing dry ingredients.
3. Make oat flour by blending oats.
4. In a large bowl mix together the oat flour, cinnamon, pumpkin pie spice, baking powder, and salt.
5. Blend almond milk, pumpkin puree, vanilla extract, coconut oil (melted), dates (let soak in warm water for a minute), and flax egg.
6. Pour wet mixture into flour mixture and stir until combined.
7. If adding chocolate, raisins, or nuts, fold into the batter.
8. Spray loaf pan with coconut oil or nonstick spray, pour in batter, and bake at 400 for 10 minutes. Then decreases the heat to 375 and bake for another 30 minutes. Let cool, and enjoy!
