How To make Lisa's Best Pumpkin Bread
3 1/2 c All-purpose flour
2 ts Soda
1 ts Salt
1/2 ts Baking powder
3 c Sugar
1 ts Cinnamon
1 ts Pumpkin pie spice
1/2 c Cooking oil
4 Eggs, or equivalent egg
-substitute 2 1/2 c Canned pumpkin
1/4 c Water
In a large mixing bowl combine the flour, soda, salt, baking powder, sugar, cinnamon, and pumpkin pie spice. In a seperate bowl, mix by hand the oil, eggs, pumpkin, and water. Combine with the dry ingredients. Bake in loaf pans in a 350 oven for 1 hour. Source: Lisa Clarke, based on a recipe from the Seascape Bed and Breakfast, Springlake, Michigan, as it appears in "The American Country Inn and Bed & Breakfast Cookbook Volume One" by Kitty & Lucian Maynard. Notes: 09/21/96 - can also be baked for 50 minutes in 8 little loaf pans. This recipe has gotten rave reviews. Good served with Spiced Apple Butter.

Bread dough:
1) 230g Bread Flour:
2) 55g Pumpkin Puree
3) 30g Sugar:
4) 2g Salt:
5) 12g Milk Powder
6) 3g Yeast:
7) 26g Beaten Egg
8) 80g Cold Milk
Pumpkin Paste:
1) 170g Pumpkin Puree
2) 1Tbsp Sugar:
3) 7g Butter
▶️Kitchen Equipment:
1) Bamboo Cutting Board Set:
2) Digital Kitchen Scale:
3) Electric hand mixer:
4) Nonstik frying Pan:
5) Silicon Spatula:
6) Stand mixer:
7) Rolling Pin:
8) Pastry Cutter:

▶️Cooking method
1) Peel the pumpkin and slice into small pieces.
2) Place the pumpkin into a bowl, microwave for 5 minutes.
3) Mash the cooked pumpkin until it is smooth. Then keep aside.
4) Break an egg into a bowl and beat gently.
5) Take a bowl and add bread flour, 55 grams of pumpkin puree (it should be in room temperature), sugar, salt, milk powder, yeast, beaten egg, cold milk and knead
6) First mix on a low speed to form a rough dough.
7) Then knead on medium speed for 3-4 minutes.
8) Then add softened butter. And mix on a low speed until the butter absorbed into the dough.
9) After that mix up to medium speed until the dough is elastic.
10) Form the dough into a ball, cover and let it ferment for 1 hour.
11) To make the filling, pour the remaining puree into the cooking pan.
12) Add sugar and butter. Cook on low heat until water evaporates.
13) Transfer the puree into a bowl, place it in the fridge for 30 minutes.
14) After the first proof, take the dough out of the bowl. Then press the dough to release the air.
15) Divide the dough into 8 equal pieces. Form each piece into a ball
16) Cover and let the dough rest for 15 minutes.
17) Cut 8 strings of kitchen twine, 80cm long each.
18) Soak the twine in some cooking oil.
19) After 15 minutes take the dough and flatten.
20) Place the pumpkin paste on the centre and wrap it with the dough.
21) To make the pumpkin shape place the dough on the centre of the string. And take the two ends of the strings and cross it in the centre.
22) Flip the dough around and cross the string. Repeat the procedure and finally make a knot on the top of the dough (Watch the video carefully)
23) Place the dough into the baking tray cover and rest for 50-60 minutes.
24) After 60 minutes, bake in the preheated oven at 180°C / 356°F for about 15-20 minutes.
25) Now our pumpkin bread is ready. Brush some butter on the warm pumpkin bread.

For the pumpkin bread (for 1 bread)
* 1 1/8 cup (150g) all-purpose flour
* 1/2 - 1 tablespoon pumpkin pie spice
* 1 teaspoon baking powder
* 1/4 teaspoon salt
* 1 large egg
* 1/2 cups (100g) white sugar
* 7 oz (230g) canned pumpkin puree*
* 1/4 cup (60g) melted butter
For the streusel (for 2 breads)
* 2/3 cup (85g) flour
* 1/4 cup (50g) brown sugar
* 1 teaspoon cinnamon/pumpkin spice
* 1/3 cup chopped pecans or walnuts
* 1/4 cup (60g) cold butter
NOTE: I baked the pumpkin and mashed it with a fork. It turned out thickly, so I recommend adding milk, water or any liquid (3/4 cup (200 g) pumpkin + 2-4 tbsp (30-60g) liquid).
If you use canned puree, skip this step.
Instructions
Make the streusel:
* In a small bowl, mix together all of the ingredients and place in the fridge while you make the pumpkin bread.
Make the pumpkin bread:
* Preheat your oven to 325°F. Line 9×5 (or 8x4) inch loaf pan.
* Combine dry ingredients together (flour, pumpkin pie spice, baking powder and salt) in a large mixing bowl and set aside.
* Combine wet ingredients (egg, sugar, pumpkin* and melted butter).
* Pour the wet into the dry ingredients and fold in just until you get a smooth batter. Don’t overmix!
* Pour it into the prepared pan and spread it even.
* Completely cover the top of the batter in streusel and bake for 1 hr and 15 minutes or until a toothpick in the middle comes out clean. If it needs more time, keep adding 5 minutes until it’s ready.
* Cool in the pan for 10 minutes before removing the bread onto a wire rack to cool completely.
