How To make Spiced Black Beans (Brown)
4 oz Black beans, soaked
1 Onion, chopped
2 Garlic cloves, crushed
1 tb Olive oil
1 ts Grated ginger
1/2 ts Cumin
1/2 ts Coriander
1 sm Fresh green chili, chopped
2 Green bell peppers, diced
8 oz Carrots, diced
2 oz Roasted peanuts
1 Orange, peeled & sliced
1 tb Sherry
1/2 Lemon, juiced
1 ts Shoyu
Drain beans. Cover with fresh water, bring to a boil & boil fast for 10 minutes. Reduce heat & simmer, covered, for 20 minutes. Drain, reserving the stock. Meanwhile, fry the onion & garlic in olive oil for 3 to 4 minutes. Put in the spices & for another 2 minutes, stirring. Add the drained beans, bell peppers, carrots, peanuts & sliced orange. Cook covered over a gentle heat for 10 minutes. Stir occasionally. Mix in sherry, lemon juice & shoyu. Add about 2 tb of reserved stock, but not too much as the curry should be dry not wet. Cook, covered, for another 10 to 15 minutes. Serve, garnished with extra orange slices. Sarah Brown's "Vegetarian Cookbook"

This black bean recipe is fantastic and easy if you are entertaining because you can place the finished product in a crockpot and it takes care of itself and people really love it. It is also gluten-free.
The sweet and spicy flavors are fantastic together along with those fire roasted diced tomatoes.
Just remember to caramelize those onions for a good 30 minutes which gives this a flavor boost.
So try this recipe. I'm sure you will enjoy it. It's also a great source of protein too. This would go great with my cilantro lime rice. Check out that video here:

• 1 tablespoon vegetable oil
• 1 small yellow onion diced
• 3 cloves garlic minced
• 1/2 teaspoon ground cumin
• 1/4 teaspoon cayenne pepper optional
• 2 (15 ounce) cans black beans undrained
• 1/4 teaspoon salt
• 1/4 cup fresh cilantro leaves chopped

1️⃣ 00:00:46 - Heat a heavy skillet over medium-high heat. Add in the oil and let heat briefly.

When I shared the Hot Lunch Box Ideas, I showed few clips of what I give inside the thermos jar and many of you wanted to know the recipe of Black beans and brown rice. I cook this recipe two ways, one using red enchilada sauce if I have on hand or just season with salt and red chili powder. Since I personally think that Brown rice and Black beans has its own yummy flavor, I do not try to add too much spices in it but sometimes I add turmeric in it as well!
You can then garnish with your choice of finely chopped veggies like onion, tomato, peppers and so on...
