How To make Spaghetti with Peas and Sun Dried Tomatoes
1/2 c Sun-dried tomatoes
1 c Boiling water
Olive oil spray 1/2 md Onion; sliced
1 c Frozen petite peas
1/2 c Fat-free,low salt chicken
-broth 2 ts Olive oil
1/4 lb Spaghetti
1/2 c Fresh basil; chopped
Salt and pepper to taste Place pot with 2-3 quarts of water on to boil for spaghetti. Cut sun-dried tomatoes into small pieces. Pour boiling water over them and let sit 5 minutes or until needed. Spray a nonstick pan with olive oil spray and saute onions on medium high until soft, about 5 minutes. Drain tomatoes and add to onions. Add peas and chicken stock. SImmer 1 minute. Add oil and stir well. When large pot of water come to a boil, add spaghetti and boil for 10 minutes. Drain. In a serving bowl, toss spaghetti with vegetables. 1 cup (150 grams) sun-dried tomatoes in oil drained from the oil
½ cup (50 grams) walnuts
½ cup (50 grams) grated parmesan or 3 tablespoons nutritional yeast
2 tablespoon (30 grams) extra virgin olive oil
½ cup (120 grams) water
1 clove garlic chopped
½ teaspoon salt or more to taste
¼ teaspoon black pepper + red pepper flakes for spicy
15 fresh basil leaves optional

This creamy sun-dried tomato and spinach pasta is a quick and easy weeknight meal for when you find yourself scouring the pantry looking for dinner ideas! It involves whirling up that jar of sun-dried tomatoes (that you don't know what to do with!) into a sun-dried tomato pesto of sorts and then combining it with a quick and easy béchamel sauce. The results are a fantastic Pantry pasta dinner this is sublime!

BETH'S CREAMY SUN-DRIED TOMATO AND SPINACH PASTA
Serves 4

INGREDIENTS:
1 lb (450g) Rigatoni Pasta
1-6.5 oz jar (182g) of sundried tomatoes in oil
¾ cup (180ml) of water
1 tbsp (15ml) of Italian Seasoning
¼ tsp (1.25ml) salt
freshly cracked pepper
¼ cup (60ml) fresh parsley
For Béchamel Sauce:
4 tbsp (60g) butter
3 tbsp (22g) flour
2 cups (480ml) milk
½ tsp (2.5ml) salt
freshly cracked pepper
1 garlic clove, minced
1-2 handfuls fresh baby spinach
Garnish:
Freshly grated parmesan cheese
Fresh parsley
Red pepper flakes
METHOD:
Add the sun-dried tomatoes to a blender, oil and all, along with the water, Italian seasoning, salt, freshly cracked pepper and parsley. Blend until a chunky paste forms. Set aside.
Cook rigatoni in boiling water until al dente.
Meanwhile, prepare the béchamel sauce, in a deep skillet melt the butter, the add the flour, whisk until combined and then cook for 1-minute. Slowly add the milk, salt, pepper and garlic, whisk to combine.
Add the sundried to tomato paste to the béchamel sauce, whisk to combine. Add a ladle of hot pasta water if needed to thin out a bit. Add the spinach, whisk until wilted.
Drain pasta, then place it back in the pot. Add sauce on top and stir to cover the pasta with the sauce.
Transfer pasta to a large serving bowl. Top with freshly grated parmesan cheese and fresh parsley.

Have A Jar Of Sundried Tomatoes? Make This Easy Pasta
In episode 3 of the pantry pasta series, we make shells with sun-dried tomatoes and butter beans. This is the definition of a pantry pasta and making food with what you have on hand! Most beans would work well in this easy Italian recipe. Garlic, olive oil, parsley, and hot red pepper flakes round out the ingredient list. I hope you enjoy this pasta with butter beans and sundried tomatoes!
Pantry Pasta Series:
Ingredients:
▪1/2 pound medium shell pasta
▪1/4 cup plus olive oil
▪1/4 cup sundried tomatoes- sliced
▪(1) 16 ounce can butter beans - drained and rinsed
▪6 cloves garlic -sliced
▪reserved pasta water
▪1/4 cup minced parsley
▪salt/pepper/hot pepper to taste
Instructions:
1. Cook pasta until al dente. Reserve all pasta water.
2. In a large pan saute garlic in a 1/4 cup olive oil over medium-low heat until translucent.
3. Add in the optional crushed red pepper flakes and sundried tomatoes. Cook for 2 minutes.
4. Next, add in the butter beans and cook for 2 more minutes.
5. Add in 1 cup of pasta water and stir. Turn heat to medium-high.
6. Add the al dente pasta to the sauce and stir/coat for 2 minutes. If required add in more pasta water.
7. Season with salt/pepper and parsley.
8. Taste test and adjust seasoning if necessary.
9. Serve with grated cheese. Enjoy!
