How To make Penne with Tomatoes & Snow Peas
12 ea Plum tomatoes, skinned &
-- coarsely chopped 4 ea Garlic cloves, minced
1/2 c Scallions, thinly sliced
1 c Green bell pepper, chopped
2 tb Olive oil
2 c Mushrooms, sliced
1 c Snow peas
1 lb Penne
1/4 ts Cayenne
1 tb Tamari
In a large pot, saute the garlic, scallions & green bell pepper in oil over medium heat until the peppers are tender-crisp, about 2 minutes. Add the mushrooms, reduce the heat to low & saute for 3 minutes. Add the tomatoes & snow peas. Cover & simmer for 10 minutes. Cook the pasta until *al dente*. Drain. Stir the cayenne & tamari into the tomato sauce & spoon over the hot pasta. Serve immediately.

INGREDIENTS:
Olive oil
garlic
Chilli
Snow peas
mushroom
Pasta noodle
Unsalted butter
Salt & pepper

Pappardelle with Cherry Tomato-Cream Sauce
Your favorite pasta in a cherry tomato-cream sauce with ground Italian sausage, peas, and parmesan cheese.
Ingredients
2 dry pints cherry tomatoes
½ lb pappardelle pasta (rigatoni, penne work too)
½ lb Italian sausage
¼ cup green peas
2 cloves garlic (smashed)
Olive oil
Splash of half & half or heavy cream
½ teaspoon basil
¼ teaspoon black pepper
½ teaspoon salt
½ teaspoon sugar
Parmesan cheese for serving
Directions
1. Bring pasta to a boil about 1 minute under al-dente (refer to package directions).
2. While that’s boiling, brown Italian sausage over medium heat (:01)
3. Remove sausage and add cherry tomatoes, garlic, salt & pepper. (:02)
4. Tomatoes will begin to burst under the heat - you can assist in this process by gently pressing on them with a spoon as they soften. Add a pinch of basil and sugar to taste. (:03)
5. Reduce heat. Pour in a splash of cream. (:05)
6. Strain pasta and reserve about 1 cup of the pasta water.
7. Re-introduce sausage back into the pan. Add 1/4 cup of snow peas and give it a stir. (:06)
8. Add the cooked pasta and toss, adding the reserved pasta water if needed to give the sauce the desired consistency. (:07)
9. Sprinkle some parmesan. Pairs well with red wine. (:11)
