How To make Spicy Shrimp Dip
Ingredients

water
1/2
pound
shrimp, fresh, medium sized, unpeeled
3
oz
cream cheese, softened
8
oz
sour cream
1
each
italian salad dressing mix envelope (0.7-oz)
2
tablespoon
green pepper, finely chopped
2
teaspoon
lemon juice
Directions:
Bring water to a boil; add shrimp, and cook 3 to 5 minutes or until shrimp turn pink. Drain well; rinse with cold water. Chill, peel, devein, and chop shrimp.
Beat cream cheese at medium speed of an electric mixer until creamy. Stir in sour cream, shrimp, and remaining ingredients. Cover and chill at least 1 hour. Serve with fresh vegetables.
Yield: 1 2/3 cups

Nam Prik is a type of Thai dip that is spicy (prik means chilies!) with very bold flavours. It's served as part of a bigger meal, and for many families, a meal isn't quite complete without a nam prik on the table!
Restaurants shy away from putting nam prik on the menu because they can be a bit of an acquired taste, but the one I am sharing with you today is what I consider a beginner's nam prik because it is easy to make and easy to love with very simple ingredients. The perfect way to ease yourself into the world of nam prik!

Creole Shrimp Dip Recipe
- 1lb Raw gulf shrimp chopped
- 2 Tablespoons Butter
- 4-5 cloves of Garlic minced
- 1 Tablespoon Parsley
- 1 Tablespoon Creole Seasonings
- 1/4 cup White Wine
- 2 Tablespoons Lemon Juice
- 8oz Cream Cheese
- 8oz Shredded Colby Jack
- 8oz Shredded Mozzarella
- 4oz Grated Parmesan Cheese
- 1/2 cup Sour Cream
- 1/2 cup Mayo
- Green Onion or Parsley for garnish
Directions:
1. Prepare charcoal grill for two zone cooking.
2. Melt butter over direct heat side of grill in a cast iron skillet. Add chopped shrimp & garlic and sauté for 2-3 minutes until pink stirring occasionally.
3. Stir in white wine and lemon juice. Season with Creole seasoning to taste.
4. Transfer shrimp mixture to a large mixing bowl and add cream cheese, Colby Jack, Mozzarella, Parmesan, Sour Cream, and Mayo. Stir to combine.
5. Spread mixture into cast iron skillet and cook over indirect side of grill until hot and bubbly about 15 minutes.
6. Garnish with finely chopped green onion and additional Creole seasoning. Serve with toasted baguettes.
