How to make Roast Chicken Legs | ChopChopBox Episode 7
Roasted Chicken Legs with Potatoes and Carrots
10 chicken legs
10 red potatoes
10 carrots
6 Garlic cloves
Oregano
Poultry Roasting herbs
Shredded Parmesan Cheese 5 oz
Salt
Pepper
Olive Oil
Montreal Chicken Seasoning for grilling
Cut carrots, red onion and potatoes into large chunks
Cut garlic into small slivers
Chop Poultry Roasting Herbs
In large roasting dish add your veggies, sprinkle with salt, pepper, Montreal Chicken Seasoning, half of the garlic slivers, and Parmesan cheese
Add olive oil and mix until all seasoning and cheese coats the veggies
In a large bowl add chicken legs and season with salt, pepper, Montreal Chicken Seasoning, rest of garlic, mix well
Lay chicken legs on top of veggies
Roast in convention oven at 375 degrees for 30 min covered with tin foil
After 30min remove tin foil and up the heat to 400 degrees
Roast for 30 more minutes, halfway through (15min) flip chicken and roast another 15 min
Check chicken and make sure all legs are full cooked

Twice Baked Potatoes w/ Bacon, Chicken & Monterey Jack cheese

~Twice Baked Chicken & Bacon Potatoes
6 Large potatoes washed thoroughly
8oz of Monterey Jack Cheese cut into chunks
6oz cream cheese softened to room temperature
1 cup of bacon cooked crispy
1.5 cups of sautéed chicken
Bake potatoes at 425 for 45min to an hour
Cut potatoes in half and scoop out all of the potato from the skin
Mix everything together and spoon it back in the shell
Remember to add the Adobo or just salt and pepper to taste
Bake at 425 for another 10-15 min and enjoy!!!
*Optional toppers chili, cheese, scallions, sour cream
*Optional add-ins Broccoli, Shrimp, Sausage

onions
ginger
garlic

Skillet Baked Chicken and Creamy Mashed Potatoes
Best skillet baked chicken and creamy mashed potatoes you will ever have.
INGREDIENTS:
2 Red/white Onions
2 Medium size tomatoes
2 Cloves of garlic
1 Hot pepper
1 Stalk green onion
3 tbsp chopped and blended vegetables
2 tbsp soya sauce
20g Thyme
1133g/2.5lbs Unskinned chicken thighs
1 Tbsp chicken/meat spice
METHOD FOR CHICKEN:
1. Chop and blend the following: 2 Red/white Onions, 2 Medium size tomatoes, 2 Cloves of garlic, 1 Hot pepper, 1 Stalk green onion
2. Add 3 tbsp of the blended vegetables to 1133g of unskinned (optional) chicken thighs.
3. Add 1 tbsp of chicken/meat spice to chicken
4. Add 2 tbsp soya sauce
5. Mix content to evenly infuse ingredients
6. Marinate for 1 hour
7. Add 3 tbsp vegetable oil to the hot pot and place seasoned chicken in the pot once the oil is heated. fry on each side for 15 mins to get the desired colour.7
8. Add an additional 3 cloves of garlic along with 20g of thyme, plus 1 hot pepper (All optional)
9. Bake in the oven at 350 degrees Fahrenheit for an additional 15 mins and that's it.
METHOD FOR CREAMY MASHED POTATO
1. Peel 907g/2lbs potatoes and cut into small pieces and place in the pot (add a pinch of salt if needed)
2. Boiled until soft/cooked.
3. Mash in a separate bowl and add 8oz of butter or more
4. Add 1/4 cup of 18% table cream and mix with the potato until desired texture is achieved.
5. Plate chicken and mashed potatoes plus your garnish of choice and enjoy.
