How To make Roast Beef Hash
1 lb Roast beef, cut into
-1/4-inch dice 3/4 lb Potatoes, boiled until
-tender and cut into -1/4-inch dice 2 md Onions, finely chopped
1 Green bell pepper, seeded
-and finely chopped 1/4 c Heavy cream
2 tb Fresh parsley, chopped
Salt and freshly ground -black pepper to taste 3 tb Unsalted butter
1 1/2 tb Vegetable oil
In mixing bowl, stir together the roast beef, potatoes, onions, pepper, heavy cream, parsley, salt and pepper until thoroughly blended. Heat 2 tablespoons of the butter and 1 tablespoon of the oil in 10- inch heavy skillet over moderately high heat. Add hash mixture, and use spatula or back of a wooden spoon to pack it down firmly in skillet, on top and all around its sides to make a neat, solid cake. Reduce heat to low and cook the hash, shaking skillet occasionally to keep hash from sticking, until its underside is crusty and well browned, 8 to 10 minutes. Unmold hash cake onto large dinner plate by inverting plate over the skillet, holding it there firmly, and turning skillet and plate over together. Raise heat and add the remaining butter and oil to skillet. Slide flipped hash cake back into pan, reduce heat and cook it for 8 to 10 minutes more. Makes 4 servings. "Breakfast & Brunch Book". Hamburger Hash - Food Wishes
Corned beef hash is one of my favorite breakfasts of all time, but other than after St. Paddy’s Day, corned beef is generally not something most people have easy access to for their homemade hash needs. However, ground beef is, and makes for an easy, affordable, and very delicious version. Enjoy!

Roast Beef Hash with Leftover Prime Rib (OMG Delish!)
We recorded this roast beef hash video in early January, and finally got it edited in late March! The good news is, this is absolutely delicious any time! Since a lot of you are still up to your shovel handles in snow, we think this is a great time to make roast beef hash and enjoy it in front of a roaring fire with a nice glassa red! Mr. Cool Gray has made roast beef hash a number of ways over the years, but this version is from and old Cook's Country Magazine.
Roast Beef Hash Recipe:
Ingredients
2.5 cups leftover roast beef, chopped
2 lbs russet potatoes, peeled and cut into 1/2 cubes
1 onion, chopped fine
2 garlic cloves, chopped fine
1/2 tsp fresh thyme, chopped fine
1/2 cup heavy cream
1 tsp hot sauce
2 TBS unsalted butter
Salt, pepper
4 large eggs
Instructions
Melt the butter over medium heat in a large non-stick or cast iron skillet and saute the onions until they are just beginning to brown (about 7 minutes).
While the onions are cooking, microwave the potatoes in a large bowl with a little bit of water, covered, until just tender (about 7 minutes). Stir half-way through.
When onions are just browning, add the garlic and thyme to the pan and stir for about 30 seconds, until fragrant.
Add the potatoes and beef, then the cream, hot sauce, salt & pepper and combine using a potato masher.
Increase heat to medium-high and cook without stirring for about 4 minutes. Turn hash in sections with a large spoon or spatula until brown bits are distributed. Repeat mashing, cooking, and turning 3-4 times until potatoes are golden brown and tender.
Make 4 indentations in the hash and crack an egg into each well. Season eggs with salt & pepper.
Reduce heat to medium-low, cover, and cook for about 5 minutes, until whites are cooked completely.
Cut hash into wedges and serve.
We enjoy ours with lots of ketchup!
