How To make Pyrizhky(Baked Turnovers)
2 1/2 c Unbleached All-Purpose Flour
1/4 lb Butter
1 Stick
1/2 c Sour Cream
3 lg Egg Yolks
1/2 ts Salt
1 lg Egg White :
Beaten With A
-Little Water For Glazing 1/2 c Coarse Sugar Crystals
-(Optional)
Combine the flour and cold butter in a processor or cut the butter with a pastry cutter into coarse crumbs. Add the egg yolks, salt, and cream and process or knead lightly until the dough forms a ball. Cut in half, wrapping each have in plastic wrap, refrigerate for at least 2 hours or overnight. Roll out half the dough on a lightly floured work surface, to about 1/4-inch thickness. Cut into rounds with a 3-inch cutter or wine glass. Place a spoonful of the
filling on one side of each round, fold the top over, brush with a little of the egg glaze and seal with a fork or pastry cutter for a fancy edge. Place each turnover on a lightly greased or non-stick baking sheet and brush with the glaze then sprinkle with the sugar crystals. Bake in a preheated 375 Degree F. oven for about 20 minutes. Cool on wire racks. NOTE: This is a short dough so a non-stick baking sheet would be the best. If it is not available, brush as little grease on the sheet as possible using a pastry brush or new paint brush.

SUMMARY
=======
Pirog (Russian: пиро́г, IPA: [pʲɪˈrok] ( listen), pl. pirogi пироги [pʲirɐˈɡʲi]; Belarusian: піро́г; Northern Sami: pirog; Latvian: pīrāgs pl. pīrāgi; Ukrainian: пиріг pyrih, pl. pyrohy пироги) is a baked case of dough with a sweet or savoury filling. Pirogi are common in Eastern European cuisines. Pirogi are characterised as the most popular and important dish and truly national goods of Russian cuisine, ubiquitous in Russian life. The name is derived from the ancient Proto-Slavic word pir, meaning banquet or festivity. The Russian plural pirogi with the stress on the last syllable should not be confused with pierogi (stress on o in Polish and English) in Polish cuisine, which are similar to the Russian pelmeni or Ukrainian varenyky.

Piroshki
My freshman year in college I had an older roommate who was dating this Russian guy. She made him piroshki and borscht one time, and everyone in our apartment got to partake. I was upset that it had taken me 18 years to taste food that was that mind blowing. They broke up shortly after, but I still remember that meal and the relationship advice she used to give me.
Miss you M ❤️
Dough recipe:
Filling:
1 lb LEAN AF ground beef
1 medium onion, diced
1 tsp salt
Pepper
Onion powder
Garlic powder
Handful of sharp cheddar cheese
1/4 cup grated parmesan (added off camera)
Note: I used what I had on hand. I saw other recipes using sautéed mushrooms, cooked rice, dill, scallions, etc. I’m assuming as long as your filling is on the dryer side, you can cram it in these dough pockets. Do you boo boo.
1. Place dough on a lightly floured surface, split it up into 20 portions, form them into balls, let rest for 10 minutes under a damp towel
2. Roll into 4” circles, add 2 Tb of filling, pinch edges closed until you have a half moon, tuck in the ends, place seam down
3. Heat up 1.5” of frying oil in a high walled pan over medium heat and fry the piroshki until lightly golden. Flip them as they cook, although mine didn’t seem to want to flip ????????♀️
