Recipe:
1/2 Cup Shredded Coconut
1/2 Cup Panko Breadcrumbs
1 Cup canned unsweetened coconut milk
1Lb Large (U-15 sized) Shrimp. Peeled and deveined, tails left on.
NOTE: (I removed my tails)
Salt and Pepper.
Instructions:
1. Combine Shredded coconut and Panko in a food processor. (I recommend adding the salt and pepper as well here)
2. Pour Breadcrumbs into a shallow dish and season with salt and pepper. (This is why you might as well mix the salt and pepper in the food processor.)
3. Pour coconut milk into shallow bowl and season generously w/ salt and pepper.
4. Place Shrimp in coconut milk and let it set for approximately 10mins +/- a day or two :)
5. Working a few at a time, remove shrimp from coconut milk and place in breadcrumb mixture.
6. PRESS TO COAT WELL!!!!!!!
7. Arrange shrimp in a single layer in your air frying basket. Spray shrimp all over with olive oil cooking spray.
8. Select the SHRIMP preset and cook 10 mins.

NOTE*
They have an apricot sauce that I did not have the items to make, but substituted a mango dipping sauce and it worked REALLY GOOD!
NOTE**
We did not have olive oil spray, so we didn't use it. Not sure if it would have made a difference lol.
