How To make Apple Turnovers
1/2 cup raisins
2 cups peeled apples
diced
1/4 cup chopped pecans
1/4 cup sugar :
or to taste
1 tablespoon fresh lemon juice
1/4 teaspoon ground cinnamon
2 sheets frozen puff pastry thawed and chilled
1 large egg
1 tablespoon water
confectioner's sugar :
for dusting
Plump the raisins in boiling water to cover while you prepare the apples. Combine the apples, nuts, sugar, lemon juice, and cinnamon in a bowl and toss well. Drain the plumped fruit, stir it in with the other ingredients, and let their flavors marry while you prepare the pastry. On a lightly floured board, one at a time, roll the pastry sheets out to approximately 12 inches square. Trim the outer edges (this is essential for the puff pastry) and cut each sheet into four 6-inch squares, making eight in all. Place a generous 1/3 cup of fruit filling just off center in each square. Moisten the edges of two adjacent sides, fold the opposite sides over, and press to seal. Crimp the edges closed with the tines of a fork. Repeat with the remaining turnovers and chill thoroughly. Preheat the oven to 425 degrees. Beat together the egg and water and brush lightly on top of the turnover without letting the egg wash drip down the cut sides. Place the turnovers on cookie sheets (for puff pastry, spread a little cold water on the sheets but do not grease; for flaky pie pastry, grease the sheets). Bake until they are puffed and golden, about 20 minutes. Serve them warm or at room temperature dusted, if you like, with confectioners' sugar.

►Ingredients
Butter - 2/3 cup ( 150 gms )
All-Purpose flour - 2 cups
Salt - 1 tsp
Sugar - 2 tbsp + 1/4 cup
Cold Water - 8 tbsp
Apple - 2
Cinnamon - 2 tsp
Egg - for egg wash
► Method
1. Mix cold butter with flour, salt and sugar.
2. Add cold water and make it into a dough.
3. Refrigerate for 30 minutes.
4. Take some chopped apple cubes and mix it with sugar, cinnamon powder and cook till it becomes soft, you can add some cornflour slurry to make the liquid thick.
5. Roll out the dough cut it into squares and place the filling and close and seal th eedges.
6. Freeze it for 10 minutes and give an egg wash and bake at 204 degree celcius for 10 minutes and reduce to 190 degree celcius for 20 minutes.
7. You can make a sugar glaze with powdered sugar and heavy cream and drizzle it on top.

*SERVINGS:*
Serves: 6.
*INGREDIENTS:*
• 4 Medium Apples (I used Bramley apples).
• 1 Pack (375g/13oz) Ready Rolled Puff Pastry.
• ½ tsp Ground Cinnamon.
• 2 tbsp Butter.
• 3 tbsp Sugar.
•1 Egg.
• 1-2 tbsp Granulated Sugar.
*OVEN TEMPERATURES.*
Preheat the oven to the following temperatures:
• Fan Oven: 180°C/360°F.
• Oven: 200°C/400°F.
• Gas Mark 6.
*METHOD:*
1. Preheat the oven to the above temperatures.
2. Peel and chop the apples into medium-sized cubes.
3. Melt the butter in a pan/saucepan and add the chopped apples, sugar, and cinnamon.
4. Stir and simmer for approx 10 minutes until the apples are just soft but retain their shape.
5. Place in a bowl and allow to cool.
6. Unroll the puff pastry sheet out on a work surface, and cut it into 6 even squares.
7. Place two tablespoons of the apple filling in the center of each of the puff pastry squares. Be careful not to overfill.
8. Brush the border with egg wash and fold over the pastry from one side to the other so that it looks like a triangle. Use fingers to push down slightly so that the pastry sticks together.
9. Use a fork to crimp the edge of the pastry together.
10. Brush all over with egg and sprinkle over with sugar. Using a knife make two small steam holes in the middle of the turnovers.
11. Place on a large line baking tray and bake for 15-20 minutes until golden in colour and puffed up.
12. When baked, leave to cool for 10 minutes on a wire rack before serving.

• The apple turnovers will keep for 2 days stored in an airtight container.
• Uncooked apple turnovers can be frozen for up to one month.
