Ingredients
1 Puff Pastry Dough
1 Cherry Pie filling, 21oz can
1 egg white, lightly beaten
For the Vanilla Glaze:
1 1/2 cups powdered sugar
2 tbsp milk
Instructions
Preheat oven to 375 degrees F.
Unwrap both of the puff pastry doughs and cut into 8 squares (4 from each dough).
Place a heaping tablespoon or two of cherry pie filling in the center of each square. Brush the edges of the squares with the egg white and fold over to enclose the pie filling.
Bake on an un-greased baking sheet for 20 to 25 minutes, or until puff pastry is golden brown.
Let cool on a wire rack. Mix Powdered sugar with milk to make a glaze and drizzle on top turnovers. Enjoy!

Lemon Filling
1/2 cup (4 oz / 113 g) lemon curd -
4 ounces (113 g) cream cheese, softened
1/4 cup (1 3/4 oz / 50 g) sugar
1 egg yolk
2 tablespoons (1/2 oz / 14 g) all-purpose flour
Lemon Glaze (optional)
1 1/2 cups (6 3/8 oz / 180 g) powdered sugar
2 tablespoons lemon juice
A few drops vanilla extract
Cherry Chocolate Filling
1 pound (454 g) cherries, washed, pitted, and chopped
Grated zest from 1/2 a lemon
1 tablespoon lemon juice
1/3 cup (2 1/3 oz / 66 g) sugar
1 tablespoon cornstarch
1 teaspoon vanilla extract
4 ounces (113 g) dark or semi-sweet chocolate, chopped (2/3 cup chocolate chips)
Strawberry Cream Cheese Filling
Strawberry Filling
1 pound (454 g) strawberries, washed, dried, hulled, and finely chopped
Grated zest from 1/2 a lemon
1 tablespoon lemon juice
1/3 cup (2 1/3 oz / 66 g) sugar
2 tablespoons cornstarch
Cream Cheese Filling
4 ounces (113 g) cream cheese, softened
1/2 cup (4 oz / 113 g) mascarpone cheese (or more cream cheese)
1/3 cup (2 1/3 oz / 66 oz) sugar
1 egg yolk
Grated zest from 1 whole lemon
1 teaspoon vanilla extract
1/2 teaspoon salt
2 tablespoons (1/2 oz / 14 g) all-purpose flour

these apple pastries are fun to make. moreish. serves 2 to 4. recipe written below.
1 sheet frozen puff pastry thawed
1 green apple peeled cored cut small into a bowl add
1 tea sp lemon juice
1 table sp apricot jam
mix gently til apple covered
2 table sp ground almonds or almond meal
1 table sp plain flour
1/4 tea sp cinnamon
mix then add
2 tea sp butter
rub between finger tips
then add to the apple
mix all together gently
quarter set aside
cut pastry into 4
filling in middle
cut 8 each side
cut both ends off
wrap around filling
cut the 8 each side in halves again
plat one side over then the other side over etc
to freeze place on tray uncovered freeze for 2 hours
then wrap in glad wrap seperate freeze up to 2 months
to cook the same day leave in fridge minimum 2 hours
pre heat oven 200 degrees c
brush milk over pastry
bake aprox 28 mins.....30 to 35 from frozen
dust icing sugar
serve cream or icecream

APPLE PIE TURNOVERS
Grocery stores are flooded with apples right now, so here is a fun recipe inspired by apple pie, but a little different and perhaps even more effortless. The caramel center is optional, but it was such a nice touch! Lmk what you think, and as always, the full recipe is below :)
✨apple pie filling:
•4 Red apples
•1 lemon
•1 cup brown sugar
•1 tsp cinnamon
•1/4 cup unsalted butter
•1 tsp corn starch, dissolved in 1/4 cup water
Peel and cut apples into 1/2-inch cubes. Place inside a large bowl and add lime juice and brown sugar; stir using a spatula. In a saucepan, melt butter over medium heat and add apples. Cook while stirring occasionally for 10 minutes. Once the apples begin to soften and look darker, add the dissolved cornstarch. This will thicken the mixture and create a caramel-like texture. Cook for 5-10 more minutes while stirring often. Set aside to cool down.
✨Pie bomb instructions:
•8 tbsp unsalted butter
•1 cup brown sugar
•1 tbsp cinnamon
•1 can biscuits
•1 bag soft caramel candy
Preheat oven to 350F. In a bowl, combine brown sugar and cinnamon using a whisk and set aside for later. Take each biscuit dough from the package and flatten it using your hands or a rolling pin. The dough should be stretched out to about 1/4-inch thickness. Spoon a small amount of the apple pie filling into the center of each flattened biscuit round, followed by 1-2 caramel candies. Be careful not to overfill, or it will be difficult to seal the pie bombs. Fold the edges of the biscuit dough over the filling, creating a ball or bomb shape. Pinch the edges together to seal the filling inside. Ensure there are no openings, or the filling might leak out during baking. Brush with butter and roll in cinnamon sugar. Place the sealed pie bombs on a baking sheet lined with parchment paper, leaving some space between each bomb for them to expand while baking. Bake for 25 mins, or until the biscuit has turned golden brown and the sugar has formed a crust. Once the pie bombs are out of the oven, let them cool slightly and enjoy!
